View Full Version : Got a new electric grinder

Was thinking about doing some Chum salmon that is getting long in the tooth in the freezer to make some salmon burgers out of.
Any hints for a first time grinder user?

Make sure that you cut it into chunks that fit your grinder with room to spare and grind it close to frozen, not soft. Fish burgers are awesome, enjoy!!
PS...........Beware if the chum is "too long in the tooth", remember that the quality of the fish you grind will be the quality of the burgers you eat!! Don't use any freezer burnt or dried (near freezer burnt) fish.

If you're making salmon burgers, don't grind up the meat as it won't have any texture. We make a lot of salmon burgers and all we do is cut the fillets into 1/2 inch cubes. Gives it some texture and visually looks good as well.
