View Full Version : HELP...Need ideas for my first Bear steak?

So I pulled out some Bear Steaks to let thaw out over night in a marinade (home made got frozen in it getting thawed in it). So I'm wondering is there any special tricks or things I should try? I was thinking BBQ it with some Baby Potatoes add some Carrots in a Butter, Brown Sugar, Dill Sauce and add some lightly steamed Broccoli and put some ground up Seed seasoning (also home made) on top? Never tried bear before till about 2 weeks ago and and that was just pepperoni and Onion Sausages. Now it's time for the real meat.

If you have any suggestions please let me know. I also know you need to cook the bear till it's really cooked but not so long it's turned in to shoe leather.

Nope no dog at this time. Also if your gonna tell me to just feed it to my dog don't bother. I want to try it first before I decided whether I like it or not. Besides I can't tell the difference in the Pepperoni or Onion Sausage that it's not a pork based product. I should add I worked on the bear myself at the butchers shop as I work part time during the hunting season there. It was free to butcher plus I got paid to do it too....practice you know for the fall season :D

as long as you get the internal temp up to 165-170 you should be good, don't over cook it:-D

OK - now bear sausage is good. Add Deer = better.

May be too late depending on how you have already processed the bear ......but bbq bear burgers are awesome or "bear-itos" (burritos) with black beans and avacado.....mmmmmm. Mixed with about 1/3 porkl is good too.

cut in thin strips and saute with peppers and onions add tomatoes and fajita seasoning mix , water , cook down the water till its coated not swimming and make bear fajitas , serve with a beer and your set. bear braises / stews really well . try a madras curry over rice .,

oh and if your osessed with eating it like a steak youd be better off freezing it in the marinade as the cells freeze they contract allowing capillary action to sink the acids and flavors deep into the meat.

That's already been done even added some Coke (pop not narcotic) to the marinade help with making it more tender. Slow Thawing and all day marinading before it hits the grill in 21 hours. Marinade also makes a great BBQ sauce. What I'm looking for are what goes well with bear....

JI agree but I'm single and don't drink. Dinner will be for one served with a nice vintage of Avalon Chocolate milk I brought home with me :D

If you're aren't willing to help why do you bother posting? I ask for a little help on how to prepare a meal with a meat I've never tried before and you regress to childhood and start cracking jokes.....about it. This is the first large game animal I've shot for food. Thanks I'll remember you 8-)

I like to cook mine just past rare but not yet medium. With a few fresh spring veggies and some garlic toast tastes yummy.

Now when you get around to cooking one of your roasts, try in a slow cooker and a can of mushroom soup. Just drop the roast, frozen and one can of soup concentrate, no water into the pot. Cook on low for about 6 to 8 hours. Now that's good eats, with left overs for some fine sandwiches afterwords!!

Don worry about the silly posts, this is the interweb!! Just eat your steak and tell us what you think.

Not such a bad thing,especially the drinks with bear meat.

I am not a huge fan of bear meat unless it's done into sausage,but i have tried cooking a roast in a crockpot with a cajun seasoning and i admit it was decent,just couldn't get over how greasy it was.

Good luck and congrats on your first harvested animal :)

I'm single...painfully single...sadly....and closest I get to liquor is Orange Juice ;)

I'm single cause my moto is "Nothing More Dangerous then a Helpful Wo-(to)-man." :D Sorry ladies but from my experience it's very much the truth.

1 of the reason I don't drink is cause Liquor is a MAJOR migraine trigger and I have enough migraines that it would take about 20 other people to match me. Just saw a specialist about them.....even he felt sorry for me.

I want to hear how your steak turned out.

I'm on my 3rd bear in the last 2 years and the whole family loves the meat. I've heard about greasy bear meat but it's always been from fall bears. Ours have all been spring bears, so no grease whatsoever, in fact throwing in some bacon is usually necessary. I've cooked roasts - w/gravy, lots of stew and mixed up some breakfast sausage - 20% pork which we use for everything from meat balls, hamburgers, spagetti meat sauce and chilli. We even tried the rouladin recipe that was posted here recently and that was a huge hit. Never tried bear steaks because we like our steaks medium rare. Bear appparently should always be cooked well.....

We seldom tell guests that we are serving bear until they've had their dinner and we've heard all the compliments. Bear meat ranks near the top of our favorites!

Heres one to try remove as much fat from the steak as possible .marinade in brown sugar, Soya sauce, ginger, garlic, salt, and pepper for 24hr. BBQ on with apple chips I like it a little charred on the out side and just cooked on the in side.

Well I cooked up a couple of the bear steaks. Must say I am surprised at how good they tasted. Let them sit a little longer then planned in the marinade due to a migraine. Both steaks were very lean with only one major line of fat through it. Anyways I had Broccoli, Carrots and Baby Potatoes covered in a Butter, Brown Sugar, Dill sauce to go with the steak. It was cooked to medium well done as I forgot to set the Timer the last time :D I can add pictures later for those of you that want to see it. I figured now is a good time to put this up since I can not sleep.
