Ok ..so I normally buy big sausage casings from CDN tire or wherever ... I tried to go to Troutfitters here in PG today ... Not remembering that they are closed sundays (Dammit if I gotta work sundays so does everyone else...;) ) ... I didnt have time to wander cambodia crap this aft so I scurried up to BV sports (that and I had a hunkerin for Fatburger) still no luck ...

I am looking for the 22 mm casings for pepperoni sticks ... I am attempting my first go at bear Pepperoni .... I usually do sausage and/or ground jerky any time I have pepperoni done is when I sent the animal to the butchers ...

so where in PG can one find special casings ... I was thinking maybe that meat place on 1st (Rogers) ...I will call them Monday
Any other suggestions

Rogers down on first is a great place to buy sausage materials. You might also try Homesteaders.

for peperoni you use SYNTHETIC casings collegen..SP?? be care ful to DRY everything even your hands as they dissolve with moisture...

ya use hog casings they work so much better if your stuffing your sausage yourself

I agree with Steven, collagens for pepperoni and skinny breakfast sausage. Hog casings for the rest.

Steven.....Thanks, this last batch turned out good, I did 7 different sausages, 3 smoked and 4 fresh for 50 lbs. I'm probably doing your German recipe next batch.

Silvertipp....I have tried many recipes over the years and continue to use the good ones, I have collected recipes from other HBCer's like Steven that are tested and proven and I know which spices I like to use now so watch for recipes I find that have them in them. The web is an endless supply for all my cooking including sausage.
