Does anyone have a good recipe for Chili Verde?
Even some basic guidelines would do, I could fill in the blanks.
Thanks,
MIKE

Salsa verde? Or stewed pork in green broth?
Have you made it before? I would just open a can from an import store if I were you. Watch out for verde mole' it can be anything green in a can, I have one that is made of pumpkin seeds.
Can you get fresh tomatillos? I usually stock up in keremeos at the end of summer/fall (still not cheap).
What I do:
Tomatillos, lime, cilantro, jalapenos, onion/shallot (or both), cumin, garlic, salt/pepper. I think this makes a good base.
Eat as is or simmer down into a sauce. I'm probably forgetting something but it works well with chicken and pork.
Slow roast chicken stuffed with limes and this stuff in a large dutch oven. I usually do 2-3 stew hens at a time as you can make lots of quick meals with the precooked meat.
I would check some online cookbook sources for good chili verde. Maybe allrecipies.com ? They have a good search feature.
I havn't had good chili verde since I was working in Texas.
