Like any other bear, the main difference I've found is the lack of fat. But as the fat is layered between the meat and the hide, it just means less knife work trimming it.

I'm not sure the taste of the meat is a product of when you get it, but more, what it's been eating?

Young spring bear is good, tastes like sweet beef. Old spring bear should only taste like pepperoni or some other sausage, it can be REALLY tough to chew. I prefer spring bear over fall bear because of less fat to deal with. Also, it is easier to tell a boar from a sow when they are thinner in the spring.

Best way to find out is to go out and get one for yourself this season. That's what I'm doing. I've read many times on here about how good bear is - now I'm going to find out for myself. Never eaten any - yet.

Bear meat tastes relative to what they've been eating. Young spring bear is quite palitible as they haven't been eating rotting fish, elderberries, or oregon grape etc. which taints the meat. One year I shot a fat 4 yr. old in the fall that had been eating secondary alpine berries during a very poor blueberry year, meat was very strong, even my dogs wouldn't go near it.

I find a good bear tastes close to pork steak with a little sweet taste add in . As long as you pick your hunting spots right and know how to cook bear meat tastes just fine .I have fed bear to lots of people who said they don't like bear now most of them hunt and eat them every spring. Main thing remove as much fat as you can and try to shoot bears with a main diet of grass and berries .

You mean it tastes like candy? Because I am sure that is what my shorts taste like.;)

I still like it though
