liberally loved up with lots of cayene pepper, chilis, Louisiana hot sauce, cracked pepper.

I'm on day 3 now and its now all gone. Hopefully the firey gaseous activity will be 2 by the time she gets home tonight :mrgreen:

ps. I didn't bother with a picture but I'm sure you've all seen dog food before? Kinda like that. ..

That just ain't right.
Sorry I'm not in the Lower Mainland I am in Prince George. I hate that Lipton's Chicken Noodle soup too. Tonight was better BBQ beef tenderloin green beans and a nice salad.

Fresh BT tenderloin with oven baked potatoes and broccoli. Good meal for sure. Used toscanny type seasoning on the meat. Sorry no pic's.

tonight i had moose calf round steaks slow cooked in the slow cooker with a tomatoe sauce with peppers and onions served over a bed of rice..and it was dam good

Tonight it is BBQ chinook salmon and bear smokies with garlic mashed potatoes and home grown green beens in a herb butter sauce.

For the next week, it will be resaurant food in Nanaimo as I have to spend the next 5 days there attending some training:cry:.

Great presentation on the sushi! Mmmmmm!!

I gotta say, I really like it when people take some thought when they present dinner to their family or guests. There is a time and a place to throw a bunch of chow on the table and dig in, but making up plates that look good makes meal time even more appealing. As one of my mentors used to say "You eat with your eyes, first" :)

My hunting group of 4 guys had an off year nothing for the wall ( 3 2 points and 2 spikes ). I thought that it was just crap when I traded my tag soup in for an end of November Van Isle spike but the meat of the smaller game that we did harvest is awsome. I had 1/3 of a backstrap that I butterflied and set magic too on my BBQ and it makes me think twice on dragging the old crap out of the bush.

Ingredients

Roast & Marinade

2 tbsp Dijon mustard
1 tbsp Thai Fish Sauce or 1 tbsp soy sauce
10 sprigs fresh thyme
One 4 inch sprig fresh rosemary
1 tbsp minced garlic
1/2 cup dry white wine
1/4 to 1/2 tsp ground black pepper
1 Eye-Of-Round elk roast (2 to 3 lbs with sliver skin removed)

2 tbsp olive oil for browning meat
Sauce (Optional)

2 tbsp olive oil
1 cup shallots, finely chopped
2 tsp sugar
1/2 cup dry white wine
1 1/2 tsp balsamic vinegar
2 cups stock (chicken, vegetable, or elk)
strained roast marinade


Method

To Marinate:

Combine all roast marinade ingredients and place in a large plastic freezer bag.

Completely lance roast (1/2 inch spacing) as deeply as possible with a long metal skewer.

Put roast in the freezer bag, draw out air and tie off. Refrigerate for 24 hours turning occasionally.

The next day remove the roast from the marinade.
If preparing sauce, strain marinade, discarding the solids. Keep remaining liquid for sauce preparation.



To Cook Roast

Set the oven at 300F regular, or 275F convection. Heat olive oil in a heavy skillet over medium to medium-high heat.
Brown roast on all sides. This will take about 10 minutes or so.

Remove roast from skillet. Place roast on top of an elevated roasting pan. Insert meat thermometer into the middle of the roast.
Roast to 125F for rare or 135F for medium rare. Respectively this will usually take 35 to 45 minutes.

Remove roast from oven and let stand for 10 minutes before carving.

Serve with vegetables of choice and sauce if you are making it.
Sauce Preparation (Optional)

While roast is in the oven, in a saucepan heat 2 tbsp olive oil over medium to medium-high heat.

Add shallots and sauté for a couple of minutes. Do not allow shallots to brown.
Add strained marinade liquid, sugar, white wine, balsamic vinegar, and stock.

Stir, bringing sauce to a moderate boil and continue to cook until sauce is reduced by half to two-thirds. This will take 20 to 25 minutes.

Sauce can be strained or served as is, reheated, along side the sliced roast.

That there looks (and i bet tastes) like one awesome meal. Although that plate-load would feed both me and my wife....appetite isn't what it used to be.

Had some elk burgers from our late season elk we just got home and a nice caesar salad....amazing burgers, seriously the best I've ever had. I know it's not fancy, but damn sometimes the simple stuff is what you remember the best.

Blacktail loin marinated with garlic and Rosemary then seared in a pan and finished in the oven to a nice medium-rare state. Sides of carrot, cauliflower, sauteed mushrooms, and carlmelized onions. Since i mainly drink white wine, I chose a South African Chenin Blanc to wash it all down with. Mmm, mmm, nummy!

i had cooked white loin steaks for dinner tonight. but then i went and cut up half the elk we got and we had one steak that just didnt make the pack so i took half and my uncle took half andi came home and fried it up and it was oh so good..nice grain fed tender cow elk mmm mmm mm

Ron,

simple really

1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1/2 tsp ground white pepper

mix together and then rub inside duck with 1/3 of the spices

add 1 tbsp soysauce to the spices and mix together and rub outside of the duck let is stand refrigerated for 2 hours

when you begin roasting - mix 2 tbsp soysauce and 1 tbsp honey and baste duck through roasting process








tonights supper - yoou guessed it homemade duck soup mmmmm love leftovers

and anytime now a large piece of Carrot Cake,,,,

Tonight is Blacktail Stew slow cooked in a heavy pot in the oven. Onions, carrots, celery, potatoes, turnip (rutabaga), and the usual suspects for seasonings.

I made the basic stock with meat, onions, garlic, bay leaf, and liquid yesterday. Tonight it gets the veggies and goes into the oven for a couple/three hours.

Tasty but not heavy handed on the seasonings...I like the taste of Venison shot with a sharp and pointy stick.

start like this, to do it my way,,,

1 find a nice 3 1/2 year old moose early in the season, about Aug 22
2 at 5 am while he is drinking water from a creek, undisturbed and relaxed, shoot him in the neck about 8 inches below his ears,he drops to the ground like a rock,"dead"! before he hits the ground !,
3 carefully field dress the bull moose!(ps; NO BUGS that time of day! :))
4 winch the entire field dressed moose into your pic-up truck, and have the moose at the butcher shop for skinning/quartering inside of ONE hour,
5 have moose "hung" in cooler for 6/7 days, then cut and wrapped and frozen!( an honest! good butcher really helps!):???:
6 NOW later, thaw steaks slowly, add your choice of seasonings/spices, char broil on BBQ or in your frying pan,:) cook a few minutes on each side, do not constantly turn your steaks, just do each side ONCE!

this type of steaks I never "marinate", or tenderize! they just dont need it !, they have NO game taste, just delicious!:-D

Braised muley fillet in German Pilsner, new potatoes, carrots, cellery, onions, garlic, etc. All in one pot. Super yummy, super tender.

Tonight... foie gras on lightly browned toasts with a compote of finely diced apple and tomatillo, mustard seed, and apple cider vinegar. Yeah, decadent. John was at Hills Foods in Coq. yesterday to pick up kangaroo for our Fish and Game Assoc. banquet, so he couldn't resist.

I hope you don't mind, I'm going to steal this and make some adjustments to cook up some elk short ribs from our animal this year. Never tried cooking the ribs from my elk as ribs before, and this looked like as good a way as any...will let you know how it goes.

I will sir...well shall finish off the remainder of the bottle of wine with the ribs and then get started on the beer for dessert. Did you find the mixture kept the ribs plenty moist or would you recommend some additional liquid or any other fat? These ribs are damn near bare of any fat at all, as I suspect much of your moose ribs were.

I keep all my elk ribs now, they're awesome.
I don't advise roasting though.
I boil or steam them until they're almost falling off the bone, then add my BBQ sauce of choice (I make my own Chipotle sauce) and broil or BBQ just enough to encrispinate the glaze.
Yes, I said "encrispinate".
Serve with garlic mashed spuds and a nice dark ale.
Mucho Gusto!

Oh, and save the water, reduce it to a stock, and use it to flavor your puppy's dry food.
He/she will love you for it.

I use all water and drippings from all my wild game for moisture on my dogs food, He Loves It.

We are having Ground Ruffed Grouse made into a pasta sauce. I use all the grouse meat from legs wings etc and grind it and then freeze for later use. Takes a bit of time to cut all the meat off but so good on a cold winter night along with a glass of Red Wine

You can for sure. I find the melted fat from the ribs sometimes is a little strong tasting for most palates though.

Reduce the volume first by simmering, then let cool, The fat will solidify and you can skim it off. The add carrots, browned meat etc for soup.
I never get to that point, the Wolf takes it al, lol

Accompanied by a home made Chimmichurrii sauce, in both red and green variations, and garnished with fresh cilantro and peppers.

ˇ 1 cup vinegar
ˇ 1/2 cup molasses
ˇ 1/2 cup honey
ˇ 1/2 cup brown sugar
ˇ 1 tsp liquid smoke (really good)
ˇ 1/2 tsp salt
ˇ 1/4 tsp garlic powder
ˇ 1/4 tsp onion powder
ˇ 1/4 tsp Tabasco sauce


Whisk and bring to a boil.

Simmer uncovered for 1/2 hour or to the desired thickness.

Last night was snow goose "cutlets". Split the goose breasts, pounded thin, breaded the standard d-w-d with panko crumbs and fried. Very delicious. Served with cauliflower puree seasoned with coriander, tumeric, and a touch of chipolte pepper. (as was the first dry and wet dredges for the meat) Oven roasted red pepper, asparagus and fennel finished off the plate. Darn, forgot to take a pic. Pretty plate, prettier taste.

Thanks BowWalker, actually John cooked the bison shanks, he likes cooking too. I just added the mushrooms, did the sides and plated it. We love stuff like that, the bone marrow adds so much flavor. Actually it was the first time I'd roasted rutabaga like that, be doin' it again for sure, it was very good and went well with the bison.

Tanya....I do rutabaga like that quite often, actually I roast a lot of our vegetables. As for the "little green trees"......try roasting them too. Toss em' in olive oil, bit of sea salt and pepper.....and give them a few minutes in the oven. They will basically turn a really rich green colour and then pull them out. The flavour is awesome....I won't eat brocolli any other way.

Yup, I've done the trees that way too, just prefer steamed myself - with butter of course :-D. The rutabaga is one I'd never tried, do lots of others, but LOVED the rutabaga that way. Used duck fat and a little EVOO with them that night. Been using duck fat quite a bit lately, definitely good stuff. Did fennel, red pepper and onion the other night, mmm. Cool to find others that are 'into' food here.

Venison Chili a' la Dan.


Dressed up and presented in a bowl with fresh green salad and multi grain buns. Too bad. The venison burger gets lost in the chili - but it still tastes like more.

Venison burgers stuffed with herbed feta cheese. Ciabatta buns with carmelized onions, tomatoes, dill pickles and a couple rashers of bacon.

Last nights dinner. 3 day marinated pork ribs, boiled for 2hrs and then BBQ'd for the final touch...... slightly crispy and fall off the bone......:mrgreen: served with asian stir fry and garden salad.

BBQ sauce was a gluten free, organic sauce. It was really good and I would recommend it. Its called Dad's BBQ sauce.

Tonight was (sorry no pics) boneless Blacktail loin, dry rubbed with a blend of seasonings that i made up and rubbed on in the afternoon. I then pan-seared the loin to crust it and then slipped it into a hot oven for a few minutes.

Served a Ceasar salad along side and some dry red Shiraz to wash it all down. It really was good.

mmmmmmmmmmmmmm we had bbq sockeye last night for supper so took the left overs and made salmon cakes - sort of like a crab cake but with salmon, so delicious, with a nice fresh garden salad, sundried tomato dressing, seasoned rice - I love taking leftovers and creating a new dish from them.

"giggling" :) you can make so many wonderful dishes with your leftovers that people would never know you are feeding them leftovers if you invited them to dinner.

I like the challenge of coming up with tasty delectable meals, no one complains about leftovers then.

Yesterday it was mulie burger, today it was pasta with ground mulie in the sauce. I think tomorrow will be mulie stew. I'm SOOO happy my wife and kids like wild meat! I have been told to fill a couple more tags and next year I think she may want me to try and chase down a spring blackie and a spike fork in the fall. Life's good here!

How I spent my Sunday:

yummy strip loin roast in smoker for 4 hours so far, smell is devine when you walk outside to the deck and another strip loin all rubbed perfectly slow roasting in the oven makes the house smell so mouth watering - yuppers, I watch far too much FOOD network TV.

Preparing garlic baby potatoes, sesame seeds & basil roasted bell peppers, tomato & bococcini mozerella with sundried tomato vinigarette salad to the beautifully tender roasted strip loin mmmmmmmmmmm supper is a grand affair tonight - now to open and air a nice bottle of cabernet/merlot for Peter and a nice chilled bottle of Baccus for me and Breanne

back to the smoker - stocked up more smoking pucks to keep the other strip loin roast smoking to perfection

dinner turned out beautiful, Peter absolutely loved how I did the roast and now I just removed the smoked loin from the smoker - letting it rest before cutting into it to see how it turned out - it does look so juicy and glazed succulently

mmmmmmmmm finished smoking - 7 hours - smoking temp 170 for 5 hours finished temp at 200 - cuts like butter and has a rich orgasmic smokey flavour and succulent juices

tonight I made a easy chili over whole wheat rice for Breanne's taste. Turkey pepperoni and ground turkey into a zesty tomato sauce with garbonzo and black beans.

She is getting better with trying to eat red meat again but I do accomodate her almost vegetarian diet :) once in a while.

Last weekend - Marinated Grizzly tenderlions in a blueberry/soy/ginger marinade seared on the grill then finished to temp in the oven. Sides of Roasted carrots/baby potatoes and button mushrooms and some sauteed garlic green beans. It was delicious.

Tonight - Chipotle pulled pork for the fights.

im having spagetti and deer meatballs to. this is the first blacktail ive shot. im usede to mulies in the past, but the blacktails taste way better. I knew when i shot my bow season spiker , that i wasnt going to have that much meat from these lil guys, when my buck knife slid right through all the cartilage on the rib cage , anyways ive got a few packs of meat left from my bow buck. dont last long but damn good.

My dinner last evening was a sandwich I had in the pocket of my snow suit, it was about minus 12 out, the cheese and butter was real hard, the meat, not sure what it was, was about minus 12 also! Tasted not bad sitting on the Quad glassing for Louie. Think this morning when I made my sandwich I might shake up a few hand warmers and stick them in the bag also!!! Hot Meals on the go!!!

This was the first time I've had Grizzly, I found it delicious as did everyone else who had it. My hunting partner made the other tenderloin using another method and everyone who had that prep method were also really impressed.

I don't know if this bear was an exception to the rule but it was really good. Could be due to the fact that it was a true mountain grizz, (feeding on berries when shot) and it was a young bear. In any even I wouldn't hesitate to eat grizzly again and I'd recommend others to try it as well!

2 elk T-Bones, dipped in milk, then egg with some Montreal SteakSpice, rolled in crushed corn flakes and cooked for 5 1/2 minutes per side in a hot skillet of olive oil......With side of fried onions.....oh yeah, and a can of creamed corn..I did not cream it:cry:

Absolutely delicious, if I do say so myself....And no leftovers:mrgreen:
