The springs were awful scarce last season up in our neck of the woods.

Took me a year of wasting/smoking salmon to come up with a great brine. Now i just wing it. I couldn't write one down if i wanted too. I first start with 4LTR of water then what ever i have in the cupboard that i think will work....
I do use a hot sauce i got from a friend from Barbados. Man they make gggooooooodddd hot sauce.

Springs brine for 48hrs and sockeye and such brine for 24hrs.....

Smoking chips 8hrs and drying time depends on temp and moisture outside.

Try www.salmonuniversity.com (http://www.salmonuniversity.com) . I've used their dry brine system for about 5 years now and have great success.

Yum! I just gave away my last piece of sockeye at Christmas time. I had smoked 8 fish in total. I need to get me some more :)

POSTING PICS such as this can only be done as a TAUNT ! up here in the "GREAT WHITE NORTH" where there are not any salmon, pictures of smoked salmon is considered CRUEL and NASTY, so I am private messaging the MODS to have them give you a TIME OUT for "member abuse" :sad:

Geeeez, I miss those since moving from the west coast:cry:. Nothing like fresh smoked Spring and a few bubblies to wash them down.

*mouth watering* I finished my last bit earlier this month.... made a smoker out of an old fridge, did up 4 springs..man were they good. i think another batch is in order..

Thanks for the tips and links.

I am in the kootenays so I will be trying out some Rainbows and Walleyes.


Anyone have smoking experience with those fish?

Rainbows work the same as salmon. Just watch how long you smoke them if they aren't thick. Too much smoke, you might as well eat the chips. Haven't tried walleye yet but I would be careful with the amount of smoke as well because their fillets aren't very thick either. I'm gonna do some walleye and perch (Alberta fish) later this spring. Let me know how the walleye turn out if you do them pretty soon.
