For most, the season is winding down. What's in your freezer this winter, and what is your favorite wild meat to eat? Any special recipes?

I've got my own elk and whitey in the freezer and bits of my dads elk, whitey and blacktail as well as about 10 grouse and 40 kokanee. Saving the fish and grouse for when family comes up in a couple weeks.
My fav would be calf elk tenderloin or moose calf tenderloin, .. only after I'm out of full-curl bighorn of course :p

I had some horse in France in May. It's kind of like chewy sweet moose.

In Canada, particuarly west of Quebec we mainly feed horses to those that are handicaped or disadvantaged in some way AND cannot hunt with any degree of success:lol: So where would you like your horsemeat?

Bear is my favorite and I have lots in the freezer. I will also be enjoying elk,whitetail,and mule deer this off season...

Second would be feral horses.


Honestly I dont think anything compares to pork, bacon specifically. Followed buy pork ribs...yummm pig!!!

Pretty tough ta beat a nicely cooked squirrel.
A nicely cooked rabbit is right up there too.

Our local game dinner featured the usual---bear, elk, moose, deer, goat, sheep, beaver, lynx and a few more. Oddly enough, the meat donated by a local trapper that was marinated, and served in a dark gravy--that was awesome---was LYNX!

I have had many of the afformentioned meats, but my favorite has to be Axis Deer. As far as recepies, my favorite is stew. Chop 3 onions and brown them in bacon fat and/or olive oil. While they are browning, cut up 3 potatoes, half a dozen carrots and celery sticks, throw them in the bottom of a crock pot. I usually use frozen cherry tomatoes, freezing them makes them fall apart when you cook them.I use a quart sized freezer bag of them. Stewed canned tomatoes or something similar can be substituted. I put about 2 lbs or more meat on top of the veggies in the crock pot. Pour in a can of cream of mushroom soup. Salt, pepper, cayenne, cardomom, cumin, marjoram, is added to taste. Maybe press a few cloves of garlic as well. Add some real lemon, red wine vinegar(just a touch) and red wine. Add water to make more gravy, maybe 2 of the soup cans full. For extra bite I have added a few tablespoons of sliced pickled jalapeno peppers. The onions should be nice and brown now, so add them on top of all this, cover and cook on high untill all is tender and done. YUM YUM!!

I have muley, whitey, bear, moose, coho, trout, ling cod and halibut in the freezer. Favourite is elk and then moose. Oh yeah I forgot, love cat too.

All I have in the freezer is bear and salmon. My favourites are bear and elk.

Elk is tops when it comes to seak and roasts (some left from last year)
moose makes awsome hamburger nothing better (some left from last year)
This years two mulies went into garlic coil ,cheese smokies and fresh sausage. My white tail is Hamburger, jerky and peperonie

I don't know - whitetail has to rank pretty high on my list! Elk and moose follow. Coastal black-tails are at the bottom!

My freezer: 2 front quarters of a blacktail (waiting to make sausage), a few mule deer roasts, a few local trout from summer and was just given some cougar that we butchered into some steaks and de boned a bunch for sausage. My favorite so far has been an early 4 point from region 3, excellent steaks, although I'm told the cougar will surpass it. Meow!:lol:

Cougar is definatly the top on the list.......... But that Cali Ram this year was just unbelievable.

Hopefully we might score a nice tom tomarrow to top off a great season!

I did up a batch of old school Hungarian pork sausage with a smattering of whitetail and moose odds and ends 3 weeks ago. Tastes great, and a couple of smoked hams ta boot. I also forgot the Halibut and Spring from our trip to the west coast in the summer.
