That's my last build based on a 1960's Hospital Food Warmer.
Near 400 pounds of stainless & insulation.
Thankfully on wheels!

I run a PID controller which controls one or two (depending on product) commercial grade electric hot plates.
It constantly checks internal product temp and internal smoker temp.
And pre-set rather limitless temperatures / times, and has it's own shutdown system when desired product temperature is reached.

For cold smoking, I run a Bradly Cold Smoker attachment:

The Auber PID controllers are great. I bought one for my new build this summer and control is far superior over past builds. Temps are flat lines now and are within .5 to 1 deg accuracy when comparing separate temp probes.

Absolutely. Same brand I use, however somewhat dated.
Collected it for my previous to this build.
Still going strong.
VERY worthwhile product IMO.
