Ran across this recipe.
Going to have to give it a whirl methinks:

Gave the recipe a try with some bear meat I had - it was pretty good!

I’ll have to do some more.

Funny Nog - this just popped up in my feed today and I thought I've gotta give it a try.

If you haven't checked out the Hunter, Angler, Cook Podcast, it's a fun listen for long drives.

I want to try it with bear. I also want to try a bear ham this year. But first - gotta get a bear. :-) The last one got eaten pretty quickly!

good idea, with many recipes usually listing similar spices in varying measures
we just put away a batch of corned moose done with a cheater recipe using pickling spices
sliced up thin ready for samitches

Sliced thin is the secret..... Also sliced and fried in substitute of bacon is terrific at breakfast too
Yum !

We've been off bacon for a while now, way too pricey for what you get
Its either venison sausage patties, double smoked pork shoulder, or corned/pastrami moose
bacon has become the treat , like turkey
