Turned out not bad at all! )
Flavour was good, slightly different than other lean cuts, texture was ... I'll call it stiff, chewy but not stringy, collagen breakdown was starting but not thorough
next one will be marinated and maybe add a beer in the liquid
Oven min. temp is 170 , so had it in for 6 hrs.

For someone who is not a meatcutter I think you did a good job ! The roasts look nicely tied !

Cook with a little liquid and at around 190-225 then it will start to break down

hmm you did a great job..from pulling the trigger to cutting to cooking..i use a crock pot..some onion soup pack mix worcestire sauce...couple onions quartered...merely fine tuning..
