Bear Rouladen

Just wondering if anyone has tried making bear rouladen?

Last fall I made rouladen out of every roast that I could out of a 3pt black tail buck & spike fork bull moose and now I've run out so I'm thinking of ideally getting a big bear and making rouladen cuts out of the roasts.

Thoughts?

If it worked with moose and dear it will work with bear. Maybe even better!
