There seem to be lots of folk in the woods these days after big game, but not much talk about Turkeys (authentic, feathered variety). Anyone had a sighting? Having a wild one for Thanksgiving or Xsmash would be real tradition. I feel a road trip coming, if chances are good.

I wouldn't expect you to see them anywhere else than from the captain chair.

not a butterball but not bad, one i had was deepfried, it was terrific all except for the drumsticks which turned into 2 little hardwood bats, they cook much faster than the rest of the bird so take them off and do them separate if your going to deepfry.

The other was roasted, not much different in texture, whatever turns your crank.

The one I still have in the freezer from spring is going to get soaked in buttermilk, I hear that really smartens them up, but I'll have to do a little more reading.

All in all its a good eatin bird but the can be a little tougher because they are wild and run for their lives, and man they can run. But not so tough that it bothers me one little bit.

I tried one that we got in Creston in the Spring. It dressed out at 17 lbs.We tried roasting it in the oven like a regular Turkey:eek:.It was not the way to do it.It did not have a lot of taste and was very tough.I will look for a smaller one the next time.
