Does anyone use liquid smoke when preparing canned smoked salmon?? If so, how much liquid smoke do you add to 250ml jars. :?:

Sorry I dont use liquid smoke. Why use liquid smoke? Just smoke regularly (but for only 2 hours, otherwise the smoke flavour will be over powering) and can.

Just put a couple of drops in. It goes a long way.

Do it exactly the same as you were to smoke it fully.....so yes brine. Except, smoke it only for a few hours.

Glad to hear........I made the mistake of fully smoking and then canning once...........wowser!!!! It had to be mixed with about 5:1 ratio of regular canned salmon. It was way too smokey tasting.

:wink: Hey Sooke Hunter , I use 1/4 teaspoon for those 250 jars with great results . Just a hint of smoke !!!!!
I cut back on the salt a little also .
