We had a great Saturday! We made my Polish sausage from the whitetail I harvested last fall. I've made this product before but it was with the help of my good hunting partner who is a retired butcher (butchers are great hunting partners to have) This would be my first go of it without him and with all my own equipment. Plus, this time I had my own apprentice. The Polish turned out awesome! It's real straight forward as it comes complete in a kit. Nice way to spend a weekend.

Looks good. How did you smoke/cook it?

Thanks Bustercluck, I use my Bradley digital 6 rack. What I like about only making 15lbs at a time is that it all fits in the smoker in one go. 6 hours in the smoker to cook which includes 3 hours with the smoke on. Used Bradley 'special blend' flavour pucks.
