That is my limited observation. What is yours? and does the meat quality, in general, vary between the three species?

cheers

Black tail tastes great, white tail tastes great too. Muley is coarser and stronger tasting in my experience.

All taste great. I got a full rut four point mulie this year that is fantastic table fare, even better than the blacktail I harvested in October.

I like all three but blacktail and whitetail are tops for me. Got my two by this year. The second was a massive two point that makes bc book. Great eating animals

I've had all three, Bt's & Wt's are always good, Md's can vary lots.
Don't matter all good,
only a few days left to harvest my own or it's tag soup,
Next year is year 4 for me hunting, it'll come I know.
I can hear them gettn closer to me though.

The nephew brought some blacktail this fall and I have got to say it was pretty tasty. I don't care much for the other species of deer. Must be the little old lady's flowers they eat that make them taste so good.

Depends on what they’ve been eating. I’ve eaten many of each, but a whitety that’s been eating out of farm fields (cereal crops) is hard to beat.

MY favorite deer are the little ones from Haida Gwaii. Nice and tender with amazing flavour.

It's all the same.
I think it's more important how you handle the meat, and how old the deer is.
Everything else is shades of gray.

Some guys I know said that meat flavour improves immediately as soon as you start cutting your own meat.

Ya I would agree depends on the food source. One of the best deer I ever ate was a muley and he had been living off an alfalfa farm for at least a couple years. Hanlding key too as others said, and I always butcher my own.

The 4 point rutty muley I got last year was the second best eating animal I've had, after stone sheep. I got a local blacktail a few years back that was fairly strong tasting. I think it really depends on the particular animal and its habits as well as meat handling of course.

my vote is for wt, but i have never ate blacktail yet

fallow was the best venison i've had while in NZ, I'd guess it would be the same here in BC, for those lucky few who have access

Still buy tags but quit eating them except hot dogs, pepperoni, garlic sausage or jalapeņos cheddar smokies. Much better things to eat.

The perfect recipe for great tasting deer starts the second the deer hits the ground. The younger the deer the less you're going to have a wild taste or the possibility of having tougher meat. Younger deer always taste good, no matter the species. The quicker you can cool the meat the better! I usually take the hide off where the deer falls because 90% of the time I do the gutless method because my deer are usually a distance from any road.

Cutting your own meat in a timely fashion makes a big difference, too. The greatest thing about butchering your meat means that you're absolutely sure who's steaks and burger you're getting. Of the thee species of deer, my favourite meat is WT doe,,,,,even better than elk and definitely better than moose.

I shot a couple Columbia blacktail once, all I can say is whoa!
Tenderloins tasted like they were marinated in tarsal gland and sea salt . Made decent pepperoni with the rest though lol

I have found out over the years that shooting an animal in the full rut does not taste good sometimes mule deer when they are in full rut and stink i found out
that the stink goes into the meat when you eat the meat it tastes like the smell of the rutting buck,,you won't notice the stink so much if you get peporinies done
or sussages etc For me the best tasting animal in full rut is a bull elk or moose toss up between the two of them..
