Hi gang, I'm getting a real consistent quality of smoked salmon that I really enjoy. I did this batch up today, taking the opportunity to enjoy a bunch of cold beers while putting a tasty batch through the Bradley. However, considering there's not much value to take from this post of mine, this is more of an exercise in posting pictures and contributing to this website that I find myself endlessly lurking around. DISCLAIMER! I am not a serious fisherman and I did not catch this salmon. The joke I like to tell when I give these treats to my friends is, "Real men buy their farm raised salmon from Costco and smoke it." Sad I know, but hopefully I'll get my Spring Bear to to get the sausage going. Enjoy.
Myles

Looks good. I have never done steaks before. I was reading about a guy who skins his fillets to get smoke in from both sides. Have to oil the rack first to avoid sticking. I have to get back into smoking fish.

Really..? A guy comes on here who is obviously proud of the smoke salmon he made and who by his own admission doesn’t post much and that is all you got for him? No wonder this place is dying with just the same couple dozen members posting over and over. Heck, take away the Open Chat section where everything non hunting and fishing is discussed and I would bet some days there wouldn’t be one post on here...

To the Op; those are some tasty looking treats. Thanks for taking the time to post.

Is this for real? WOW

There's a way to let people know, without pissing on they're parade.

Nice work on the smoked fish, it was a nice day to mow the grass yesterday around here. :-)

Yup stand by my statement.
Dont support the demise of wild runs with sea based fish farm crap.
Yes brine looks good but look at those heavy defined fat lines in an unexersized fish. Yuk.
To each there own . thats my opinion.
But hey fill your boots or freezer with that demonized product.

Chill dude. Wow sensitive. Lol
Block me maybe best if ya dont care for my posts.....hey Fuzzy do you support canned hunts or Elk Farming too, geezus.

To the OP.
Sorry if I offended you. Certainly didnt mean too.
And yes guys are right this site has taken a dive from lack of posts.
Myself included. I guess i offended a few softer folks on here.

No intent. Just choked for any support of fish farming that yes has helped the demise of Wild Stock.
Plus all the new from DFO Screw overs ....... Its clear Fish Farms are far more important than Wild Stock.

Lol. I’m chill and haven’t been described as being sensitive before so thanks for that CT. Oh, and I never said I support fish farms one way or the other.

OP, sorry your thread got sidetracked and again, enjoy your smoked treats...

Robert05, here is the brine I prefer. It's a very simple recipe. I'm happy with the setup. For $35 I purchased the red tool trolly from Princess auto, cut it to the preferred height, put the custom table top on it and actually mounted the smoker right to the top. This way I can wheel the whole thing into the meat cooler you see in the background for storage. Best part is, it makes the cooler smell like a deli. delicious.

3 cups water
1 cup Soy – Kikkoman – regular
½ cup brown sugar
3 cloves minced garlic
½ onion – sliced
A few dashes of Montreal steak spice

FYI you can purchase additional racks for the Bradley. When I'm smoking i just flip the trays over and double stack them, that way you get twice as much done.

Curly Top, no issues here. I know how these forums work. Lot's of varying opinions on here and never an easy way to discuss sensitive topics. We live in a very sensitive society these days where no matter what you do, some outdoorsman is pissed off that I buy farm raised salmon or some vegan is unhappy with what I like to eat or some politician is upset with where I stand. There's lots of room for everybody. I see your concern with the fish, thanks for your stance, however, you gotta pick your battles. It won't be me but if somebody gets convinced not to buy farm raised, we might just find them buying out the back of a van from somebody's sustenance hunt. There's just no easy fix. Have a good one.

I've had a slab of beef in the smoker all day and now in the steamer doing Montreal smoke. Tried it a couple months ago and it was awesome.

He said please and was very polite.
I fully back this opinion.

It important that people speak up and educate those that are not up to speed with all the issues caused by Salmon Farming.
Purchasing is supporting without knowing. No different than purchasing halibut quota. Don't get me started on that.
