^^^looks awesome Gate...lol wish I had pics from me and my friends meals the other night: we had WT and MD buck meat from my bucks this year, cougar from his cat last year, moose and elk from his harvests the last couple seasons as well..and grouse from this year we made a cream cheese and jalapeno sandwhich between each breast mmmm..

I'll never forget the meal below though: it was 2010 and my second year hunting, the pic below is of my first whitetail: we had WT steaks that night on the campfire as the little buck was hanging, no deer has tasted better for me to this day..

Over the last couple of days, Bear Barley Soup - make an extra large Sunday roast, the leftovers go in the soup pot. One of my favorites, no matter what wild game.

Did one up last year and was not the best... looking at utilizing the shanks for more than just ground.

Roast and perl a red pepper or use one out of a jar. Chop it up finely with cilantro, parsley, garlic, green onion, lemon juice, olive oil, chopped chilies or chilli paste like sasmbal olek and salt and pepper.

Preheat oven to 200 F. Put your steaks in there for about 20 minutes. Then remove and put directly into a piping hot cast iron pan. Quickly sear both sides, remove from pan and let rest in a warm place for 7-10 minutes. Slice and serve.

Oven + pan sear is truly the best method for a good steak. Little bit more complicated than defaulting to the BBQ but it is definitely the best method.

i am amazed/dumbfounded/stupified that I reached the age of 58 and only just learned (and made/ate) venison shanks (aka osso buco)

usually these sinewy bony morsels were thrown in the ground pile

never, ever again

no pictures, just a heads up - if you haven't made them before you are missing out one of the best vension meals........ period, full stop

THat's actually one heck of great idea for a HuntingBC wild game cookbook. That could help fund this wonderful site and even go further with wildlife society project donations - or other worthy causes.

Maybe the proceeds could go towards a BCWF advertisement fund that local gun clubs could draw on to let the people in their communities know what they're doing and what they think about issues effecting hunting and gun ownership.

Another ground moose dinner in the form of meatloaf. Stumbled on this idea on FB where the recipe calls for ground beef. Called Falscher Hase, or mock rabbit. No idea why I never ran across this dish during my time in Germany. Gonna be a cholesterol bomb but what the hey, going over the deep end occasionally is good for the soul. It's in the oven now, should be done in about 45 minutes. Stay tuned, I might get around to posting the end result.

it's a wrap! Doesn't look quite as crisp as in the pro video, but tasty nonetheless. Didn't really measure anything, just filled the loaf pan. Built it too tall so placed it into a second aluminum pan to catch the drippings from the bacon. Still set off the smoke alarm a couple times...

Has anybody tried cooking with an Insta-Pot? Basically a pressure cooker with a few other bells and whistles.

I did a beef tri-tip last night and it was incredibly tender and delicious. Can't wait to try a game roast the same way.

Mule Deer Schnitzel


Heat the olive oil in a large wok. Add the sweet potatoes, stirring to coat in the oil. Season with salt and pepper and chilli flakes.
Turn the heat right down and cover with a lid or sheet of tin foil. Cook for 20 minutes. Once they are tender and cooked, remove from the heat and add the pears. Keep warm.
To make the schnitzel, place each piece of venison in between lightly wetted cling film and gently flatten with a rolling pin, the thinner the better, then repeat the process with the other slices.
Dip each one into flour, then beaten egg and breadcrumbs, pressing the crumbs down well. Heat the oil and butter in a frying pan, until just turning slightly brown, then cook the venison for 2-3 minutes on each side

LOL! Used to be that I worked the river hard all winter for steelhead.
Between that, and smoking two packs a day, the weight always stayed down.
Now, no steelhead left, and going on 4 years smoke free.
The Buddha Belly is damned AMAZING of late!! :shock:

Every now and then I screw up just a little bit, but that often turns around to be actually rather damn good!
In this case, I took a section of last fall's Blacktail Backstrap out of the freezer, prepped a great marinade, and settled the meat into it.
Went to put it in the fridge, and realized I already had steaks ready to go for that eve.
And of course the next night was my birthday session of the Port Alberni Diner's Club,.
So, the backstrap sat in the marinade for two full days, stirring to ensure full coverage from time to time.

Last night it was up. Looked great right from the start:

I was hesitant at first too.
But I like to BarBee damn near everything we eat, and doing that was downright tricky with halibut etc.
So, my Lady latched onto one of these for me to try.
They are constructed of the most recent generation of Teflon btw. Completely 100% inert.

Long story short - I now have three.
One I cut into specific sizes for specific meals (fish etc).
One is whole and does larger items.
And one has taken up permanent residence in my camp kit.

We used the latter a fair bit on our last hunt. Simply laid it out over a grill over coals.
Worked like a hot damn!! Even did up eggs and bacon right on the mat.

I use the Cookina brand. They are durable, and do the job as stated.
Give one a try, methinks you too will be impressed...

I love posts like these.

I have lots of non hunters on my FB friends list. Rather than just post "hunting" pictures I like to set up an album similar to this. Show the hunt, the camp, the hunting process, the butchering and the final meal on the table. While some people will be turned off by just a "hero pic" of a dead animal, everyone likes to see the whole thing, and it helps them understand hunting more. I get lots of "I could never kill something, but totally respect hunters that will go out and get their own food"

Due to having a severe migraine since the beginning of January that various meds could not get rid of, I was the recent subject of a wide variety of tests (next stop Cat Scan and perhaps MRI). They had already determined my blood pressure had shot up a fair bit (not overly surprising considering the stress). Just got the call this morning they are now concerned that my cholesterol level has also shot up. Double Dammit! Feeding my Foodie habit is one of the few things I've been able to enjoy the past little while. And now that might have to be curtailed for a spell...

Are you able to do any king of workout or physical exercise?
Because that would help bringing down your cholesterol and probably the blood pressure too.
Grapefruit and avocado are both beneficial if you can have some every day.

Unfortunately at this point I have to be reasonably sedate.
If I get the blood flowing with even a little exercise, the headache becomes a piecing bolt of pain.
They think that may be somehow related to the increased blood pressure, so now taking meds to bring that down.

The meds are another story entirely.
Bad belly, and "brain death" as my Lady calls it.
Super enhanced SomeTimers becomes instant All-The-Timers as soon as I take the one set.
KRAFT at it's finest... :(
Up to far too many pills daily for someone who always hated the damn things...

Hope they get a handle on this chit soon!!

I will go and get some avo's right now though. Love them!!

I have 2 supplements with sulforaphane, one is BroccoGen 10 the other is BroccoMax.
I think you should try it, you got nothing to lose and they have no side effects.

Google 'Sauerbraten'. It's a German dish with regional variations, but essentially the meat is marinated in a red wine/vinegar solution with various spices. Bay leaves, cloves, onions, carrots, juniper berries, garlic, celery, leek, rosemary.... The marinade with spices is brought to a boil & simmered. Once cooled, the meat is added. Minimum recommended time in the fridge is about 4 days. I used more liquid than usual to ensure the entire roast was covered. That way I didn't need to turn it every day. The roast is removed from the marinade, browned on all sides. Marinade poured over browned meat, then simmered for 2-3 hours depending on size. Gravy made from the marinade by adding a thickening agent, gravy mix, flour or starch.

Works well with beef cuts that are on the tough side, making for a very tender end result.

Tried a new-to-us version on Brussels Sprouts last night.
Simple actually - smother with olive oil, toss on a baking pan, add a bunch of thin sliced garlic over them, then cover with fresh grated Parmesan.

Biggest secret is keeping ones pie hole off the pie untill its chilled thoroughly..like make friday..enjoy on saturday cold.
I too have 2 shoulders from my mulie and will do greek mule deer shoulder instead of lamb .

Those oysters look incredible. I grew up on the coast and spent most summers on our sailboat cruising up and down the coast. I was the fisherman in the family and would keep us supplied with lots of fish, crab, prawns and oysters. I sure miss the great bounty of delicious seafood, casually dropping off a crab trap and knowing that it would be full the next morning, or running our dinghy up into little tiny cracks of secluded bays and diving for oysters a few feet down. And sometimes my mom woudl say "stop catching so much crab! We are sick of it and want some pork chops for dinner! How can you get sick of crab meat? :)

Normally I take the leftovers and make split pea soup. After chowing down, the decision was made NOT with this one!

Superb flavor, melt-in-your-mouth consistency (no need for the knife at all) means this will be another meal unto it's own in the next couple of days...

Nope. They cut me off EI without transferring me onto a Medical Claim.
Stated I had "plenty of time to contact them" to do that.
Complete & utter BS.
Don't qualify for any of the Carona programs.
Don't qualify for welfare (not that I would even ask!).
Sawbones is suggesting I go on CPP Disability asap. Given no other choice I may have to.
Current backlog for that is around 5 months or so.
So, going to be a long broke haul for a spell...

And there ain't much "cheery" about that. :icon_frow
