What’s your favourite knife for processing animals in the back country?
Do you run a havalon with replaceable blades? olfa razor blades? Some fancy benchmade with high tech steel? Buck? Gerber? Sog? Leatherman? What’s your favourite steel?

I was a Kershaw fan for many years, but since I got my Outdoor Edge Razor Blade knives, the Kershaws rarely get used.

My favorite is a Gene Ingram B&T, but I use a havalon a bunch. And a couple other customs as well. And a couple K. O. A. Jobbies that are pretty good as well.

Cold steel master hunter plus. That san mai 3 blade (japanese) really stays sharp through out the hole process. Only downside is, as with all knives, is that the fat sticks to it when its cold and "dulls" it. I just bought an outdoor edge replaceable knife to try out this coming season. See how that goes...

I think I paid 60 bucks I've got that much benefit and more just out of the little boning knife for final processing holds an edge well.

I like my Wyoming knife in combination with my spiderco rescue assist. These in combination with a hatchet work great.

My go to is the grohmann deer and moose knife. i usually have a kershaw in my backpack and a folding gerber that I use a a camp task knife.

i use bowe style premier long knife but after having to turn into doctor and and put 4 stitches in my own hand field dressing a bull moose. Because of lock blade failure i don`t trust the lock blades anymore.

I have a buck mini with the rubber handle and love it, small rubber handle, easy to maneuver and I also carry what I refer to as the Zipper, the Gerber upturned knife with the ball point on it, works great for gutting animals.

My main go to is my Buck 110 folder that I bought in early 1980. It’s been sharpened more times than I can count and still holds a great edge.

I bought a Bark River Featherweight Fox River in Elmax steel towards the end of last season and I was able to gut/skin one deer and skin 2 others. It still remained sharp after and it’s also a stainless which is nice when you go on the long hunts and get rained on. It will now accompany me on all my mountain hunts but I still bring my havalon for caping.

Favorite is a Mora, as the Scandinavian grind can be touched up by a monkey in the field. They are also cheap, durable and feature quality steel. I use a wood handled one which now perpetually smells like deer blood, but really the 511 is unbeatable for $14 Canadian: http://www.workwearcanada.com/products/detail.cfm?product=1755

I've also used an esee RC3, which was a great knife but unnecessarily heavy-duty for field dressing, harder to sharpen, and the sharp edge of the finger choil could potentially pierce a hide if you're not careful.

-- I grew up loving the Finlander and used it for decades and now since I love knives and their look and feel I found a knife that is absolutely unique in design and iz awesome it's called Chicago Cutlery and i fell for it's appearance and feel, and sharp and stays sharp. I'd recommend this TM to anyone to check out 4 sure. Also the Original Bowie knife my girl gave to me and it's good for gutting and skinning mule deer. Beauty knife 6 inch blade.

Outdoor edge flip and zip with the mini folding saw for me, small compact and litteraly like a zipper when skinning. Little saws great for cutting the brisket, tree branches for ground blind or cutting tree branches when putting a tree stand in.

Some really slick looking knifes you guys got though, I bought one of the havalon pirantas, haven’t tested her out yet figured it would be a little better for deboning, anyone got opinions on those ?

I don't really like Havalons for deboning there's no strength to the blade for digging in to a joint and twisting the knife to pop the tendons and open it up. I've broke a couple blades trying I don't even try any more, its dangerous. But they're silly razor sharp for other work just don't force them and use them like a real knife.

Not the greatest for deboning if you are someone who tends to touch the bone with the blade. Doesn't take a lot to start to roll the edge if you are against anything other than meat.

That's where the Outdoor Edge Razor Blade kicks the Havalon's butt. The OE has a far more rigid frame and blade than that flimsy Havalon finger slicer. Save the Havalon for caping duties where you'd normally use a scalpel.

Here is a beauty made for me by a good friend Don Heaton aka Don Leo Johnathan.It was dreamed up over a conversation about a gent who killed a grizzly with a knife when he was attacked when packing a moose.I think Don was better suited for tangling with bears than I but he built the knife for me with that in mind.Hence the finger grooves and the heavy hilt and blade length.It is with out a doubt my favourite.

Same here. Except I got my first one in 1969.
It has been sharpened so many times the blade is now somewhat shorter than my trigger finger.
Of course I did collect two more over the years.
These have always been my main Go-To for field work.
Unlikely that will ever change at this stage in life...

Yeah except the OE blades are junk.
Havalon blades will last a season, you need 3 OE blades to skin a deer.

The issue is people using these scalpel style blades for more than they're intended to do.
They are skinning knives, not breaking knives.

I carry 3 ....

1. Cold Steel Master hunter. Excellent money for about $100 USD if you shop around online. Have had it for 10 years now. Very nice, grippy and long handle. Great size blade that is 3/16" thick so it makes for a perfect utility knife to chop down branches, make kindling etc ... Holds an edge very well so i use it for a lot of my butchering in the field as well especially when working joints or around bones as I don't want to snap off a Havalon blade. it's also made in Japan, not china so that's always nice. The sheath on it is garbage as you can see in the pic, so i made my own leather one. Took this pic before I finished wet-forming the sheath and burnishing the edges, but you get the idea. i think I made the sheath 4 years ago now and it's been perfect.

2. This Outdoor Edge Zip knife weighs about 2.5 oz i think and its great for cutting through the hide and hair to save the edge on my other knives. Tail to skull, down each leg and anything else you need. 5 bucks so far and still holding edge just fine. Don't REALLY need this one, but my GF got it for me as a gift.

3. Havalon - These things are cheap enough that everyone should have one. Replacable blades that are always razor sharp. Great for deboning and delicate work.

Out of season, when i'm not going to kill anything i carry just one, my Spyderco Paramilitary folder in S30V. Had this one for about 10 years now as well ant it's been superb. They're not cheap though. Last i checked they were $280 + tax at House of Knives. I think i got mine on eBay in 2008 for $130-140 USD.

Hmmm used a lot of knives over 40 years.some run of the mill over the counter..others special order..ie my Buck whitetail special knife.
My go to knife these days ? I have been truly Blessed to have Mr. Marty Beets make a custom knife for my " retirement" resignation..end of 38 years as Paramedic..it was a surprise gift from my coworkers, it is a special crucible steel , very fine grain, takes a very good, great sharp edge that lasts.
It does a phenomenal job on any animal, grizz, black bear, moose, deer, elk...however it IS so special I am really nervous on losing it.
It was encouraging to see IronNoggin using a smaller knife..too often folks are reaching for a Bowie knife..much too big.
I have both a Havalon and a caping knife..for ..caping..
I also keep a Bog Dog in d2 steel with resperine" think truck tire like handle for camp knife..hacking, batoning" really tough knife..

I always have a Leatherman Wave on my belt but I have a couple Bark River knives that I love to carry because they are just such high quality tools and I prefer using them to the Havalon I keep in the bottom of my pack.

I compare a nice knife to Gransfors Bruks axes-- sure a plastic Fiskars will do the same job, but it is a crappy plastic tool not a hand-forged heirloom.

Ontario Knife Company, Black Bird SK-5, full tang, G10 handle, 154CM steel. Use it for everything on elk moose bear deer. Caping Aping small Buck knife or buddies Olfa blades.

grohmann are a great canadian made knife for hunting, excellent for skinning and gutting and a good meat cutter too. i would recommend going to a butcher and asking to buy a vitorinox boning knife and a steak knife if you are going to do you own cutting, they are a good workingmans knife with good steel.

Straight BS, too bad you bought the wrong knife but just won't admit it.

I gutted, skinned, and trimmed up 3 deer this past year with the same OE blade, and it was still sharp enough to clean up a skull cap afterwards. And, OE blades can be sharpened if you have nothing better to do.

Guys I know are buying 100 packs of Havalon blades because they're breaking and dulling them constantly. OE blades come in a 6 pack because they last so long and don't break all the time.

There seems to be a lot of buck 110 knives that seem to stand the test of time. That's what I picked up for my kids for their fist knife.

I broke a couple early on as I was forcing it a bit too much. Since I carry two knives I simply use the havalon for delicate work only and my fixed blade when working around joints etc.this way the blade replacement doesn't even need to happen in the field. One should be fine for the trip.

Not a big deal.

I bought 2 or 3 of those finish cheapies, they sharpen up quickly and get super sharp! usually go the whole season with the buck without a stone sharpen, just touch ups on the hone! I bought a bruks hatchet, it is razor sharp, and works well for any chopping I ever do, and I have a wyoming saw, but rarely use it ever, since going to the gutless method. Moosin

I agree! The blade is a little narrower than it used to be! Gotta fix the sheath for it, a rivet pulled through! Moosin

You can buy new sheaths from the factory, just google them.

I've been running a pair of the original gerber gator fixed blades for about 20 years now. No complaints,they sharpen up nice, hold their edge well, and I love the shape of the handle and the rubber on the handle gives a really good grip. If I know we're gonna be somewhere that a total breakdown of the critter will be necessary I will also pack a flexible blade 6" filet knife for doing the loins cleanly

Hehe I have the same kind of knife from Blacktail. I use it and my good old Buck knife. I dont mind having to resharpen after using when necessary but using both I can get thru the deed without sharpening.

I like their knives as well, but simply been running the Buck for so long I would feel naked without it. :wink:

My Dad's vintage Rich A. Herder Solingen Germany "Buffalo Skinner" and an Outdoor Edge. I carry the "Skinner" on my belt in a homemade sheath and the Outdoor Edge in my pack. Both are wickedly sharp! I really love my Dad's knife. It's a prize possession of mine.

How do Grohmann knives compare to other brands like Puma, Mora, Buck in terms of quality and performance per dollar value? I think they are high, but want some input before I get a #2 for small game/fishing.

Have a couple different Knives of Alaska knives. Like the little one, cub bear I think, for caping. The big round nosed cleaver (Brown bear?) actually works great for skinning out big animals and you can chop right through a brisket, neck or pelvis if the mood strikes you. All hold an edge well.

Love those old leather washer handle knives. Always feel better to hold than bone or wood handles, especially in the cold. Some of the knife makers on this site should have a go at.

Yup. Me too. My work hammer has a nice leather handle too. I paid extra to get one with a handle like that.

I have a bunch of Custom Knives, Bob Lay, Don Stevenson, Blacktail, I pack and use an Outdoor Edge Ultralight replaceable blade knife and one of my favourites is a Victorinox Serrated Blade knife and sheath for about $15, deadly sharp, you can get a few sharpening out of them, used them for years working in the net loft buildings Seines and for years commercial fishing.

My havalon piranta is my goto, done many animals with it, usually able to do a full deer in 2 blades(boned out).

Keep a old folding blade on hand always that my grandfather got from Portugal, works great for some cases when the havalon just doesnt have the strength and stability working around some bone areas.

Victorinox as posted on page 4 ! Fibrox handles are very safe even when wet .

Buck folder with bright orange plastic handle, easy to see if you lay it down .

Buck 121 bought many years ago ,keeps a razor edge .


Recently purchased a BK9 as a workhorse for vehicle camping . You can baton that thing, dynamite for making kindling .

My husband and I have both been using Havalon with the replaceable blades for the last few years. I like them, except when I accidentally snap a blade in half. For now though they're working well enough.

My favorite is the one I just found. Couple years ago my son bought me a beauty Buck fixed blade with a gut hook. Rosewood handle, way too pretty to hunt with. So I did, got a real nice buck and chucked the knife into the back of my rig when I was done. Forgot it and never saw it again for 2 years. I could not get it out of my mind. Kid would ask me how I liked the knife and could he see it... Yeah sure it`s around here somewhere.Drove my crazy.
So the other day I decided to GUT my truck, under the seats , behind the seats, in the back...everything.I used the shop Vac to suck up about 45 pounds of hound dog hair.
I found a BUD beer from 4 years ago. 2 shotgun shells ,18 .22 shells,a knife sharpener, 2 screwdrivers and.... my lovely knife!
So now I don`t have to lie to the kid about how the knife is doing. She be fine.

Yup! Me too. Too easy to over look a knife when your rolling around animal parts and your tired. I have one that I can change the blades and was able to pick up a few when the knife was discontinued.

Yeah except the OE blades are junk.
Havalon blades will last a season, you need 3 OE blades to skin a deer.

The issue is people using these scalpel style blades for more than they're intended to do.
They are skinning knives, not breaking knives.

I like the havalon. I only use the gutless method when out in the field and I find one blade can easily do the skinning, quartering, and removing the back straps, tenderloins, and neck meat of a deer.

I used to use Havalon ,now it's Outdoor Edge. Much easier and safer to change blades

I haven't had any issues changing blades on the Havalon,,,,BUT I always pack a small pair of needle nose pliers to do it. I'm glad I got the neon green one because it sticks out like a sore thumb when I lay it on the ground! I was forever looking for my buck knife when I'd lay it down. LOL

Being a new deer hunter as of last fall, I did some homework on knives. I've been offered to borrow some expensive hunting knives from friends but I found they were heavy for backpacking. I looked at getting either Havalon or Gerber replaceable blades but in the end, after what some suggested here, I decided to go with what I already had.

They worked great for gutless method on 2 deer.
The Ofla does most of the work. A quick blade snap off the boot sole if I feel the blade gets dull keeps me going with no interruptions.
The Swiss Army knife comes out if I need more force (head removal, cutting through ribs, etc).
These 2 knives make a nice light combo for backpack hunts.

I lost a Ka Bar while gutting a bull moose. I found it at the site a couple of years later, after looking for it on several hunting trips at the same spot.

I use Buck knives. I like very thick handles because my palms cramp up, especially when trying to cut out the diaphragm.

Gerber beats Havalon (same style of knife) IMHO due to the fact it is so much easier to change the blade.
I used to like Buck knives when they were made in the US. I believe they are made in China now and the quality of steel isn't the same?

Another vote for the
Outdoor Edge Razor Blaze. I've harvested a whitetail and small boar with the same blade and its still razor sharp. Also like a Camilus Les Stroud knife I picked up. That thing is indestructible and works great for batoning (the OE Razor Blaze isn't suitable for that imo) solid olive wood handle and thicker super sharp blade. Always wanted a Grohman and that will be the next knife I purchase.

Who else is stoked for spring bear? I've started dreaming about it, even though most of my spots won't be good till May.

Buck 110 ( I have two ) I also have a Cutco . I also have a KBAR and a leatherman . i figure it got all the bases covered with those . im in the process of having a custom sheath made for the KBAR as i have read many people have lost one due to the fact they fall out of the standard sheath and i have noticed it myself . not very sturdy in the sheath ,so a good sheath would compliment the knife as it is bulky ..

I upgraded to the H1 and love it. Have used the Grohmann for 20 years and only stopped when the sheath got mold and I couldn' get rid of it.

Havalon. I was a hater, then I tried one. Sweet sweet Jesus do they work well. It wouldn’t be my “survival”
knife and I will always carry a full shank, but I have fully taken apart several bull elk/moose with my havalon without any issues. Love em!
