1 teaspoon brown sugar
1 tablespoon kosher salt

1 tablespoon dehydrated minced garlic
¼ teaspoon cayenne pepper (optional)
1 teaspoon freshly grated black pepper
2/3 cup dark beer (Guinness is good)
2 ounces potato starch
1/2 cup ice water
