Butchered a bunch of chickens and ended up with a bunch of fat/ skin/trim and was thinking of making some bear sausage with it...terrible idea or brilliant?

If you keep the % of chicken low it would be safe flavour wise just a filler then

Dont know anyone who has tried it though and really only one way to see if it fits your personal taste buds. Think it's really just a matter of experimenting what the best % would be

I really have a craving for some itlaian fresh sausage done on the grill, have made some before with a high mountain kit, tasted amazing..i usually do 15% straight fat, so was thinking 25% cause its not straight fat..unless someone says it will be terrible I'll try it next weekend...if not I'll just eat the fried chicken skin straight lol mmmmmmmm

Chicken is one of my favorite food groups (along with pig). Not yuppy chicken breast only type, but sounds discussing to me.

Makes sense to me. Bear is good, chicken is good, so obviously the sausage must be good!
