No game roasts left so bought two big prime ribs and cut them into three each and vacusealed. 4.77 lb at superstore this weekend.

How did they look? Just had a gander at the flyer and it says "cap off". That's the best part.

lol.... No worries. The cap is the outside edge of the roast, about an inch thick, that has a texture that is more grainy, more flavorful, and edged with some fat. You can see it well here. Cheers.

The cap on a prime rib is by far my favorite piece of meet.

This is a useless discussion now. The wife just hit the Superstore to have a look and, "Due to circumstances beyond our control this item may not be available during this time frame." So even if we did want some crappy prime rib without the end cap, we can't get any!

I just asked the butcher for a full piece and she came back with a cryovac'd 20 lb section for $95....she would come out with a tub of meat with a dozen roasts in it,looked like a bloody cartoon...people wood would come from everywhere, push and shove, grab what they could and bugger off...pretty sad to watch
