Just thought I'd share a recipe that was given to me that I absolutely love. I've been making beef jerky for a while now and recently cut up a deer roast I was given and made it into jerky and everyone loved it. It's mildly spicey but you can tweak it to be hotter if you prefer.

2.5 lbs meat cut into thin strips

Mix together:
2/3 cup soy sauce
1/3 cup hot water
1/4 cup Worcester sauce
1 Tbsp mesquite liquid smoke
1 Tbsp Garlic powder
1 Tbsp Onion powder
1/2 Tsp Cayenne pepper

Mix with meat and marinade 2 hours to overnight (overnight is better) I usually do about 12 hours.

Sprinkle on red pepper flakes once in dehydrator. I used a 5 pepper blend of flakes and it made it considerably more spicey.

160° 2-8 hours depending on thickness and your dehydrator. My batch of 1/4" deer was about 3-3.5 hours.

Enjoy :)
