So I'm planning to get back (finally) into fishing more this year, and thought I'd ask if people have any good recipes/techniques for canning trout.
Years ago I did some salmon with pretty good results but forget more than I remember. :)

Curious if anyone has successfully canned any yellow perch too. Grew up catching and frying them up...very tasty....but wouldn't mind giving them a try in the jar.

it is just the same as salmon..do a google search for time and pressure in the canner. I have not bought canned fish for years.

Not good quality pics but I don't have capability to scan. Used to can all sorts of fish and seafood and these instructions served us well. There is a disclaimer to heat the product prior to serving but we never had any issues by avoiding that step. As Horshur mentioned the time and pressure is critical to adhere to and you must adjust the pressure for your particular altitude. Also important to check your lids carefully for correct sealing and security.

1 table spoon vinegar,1teaspoon pickling salt added to pint jar of fish, cook in pressure cooker for 90 minutes at about 12-15lbs. make sure the weight jiggles a bit. As Daybreak said make sure you check lids for sealing. I skin salmon but leave it on trout and perch but scale the perch. I would also google instructions for your pressure cooker.

Just what was said above. You can add a hot pepper or black pepper corn or a drop or two of liquid smoke for a different flavour. Pretty much anything you want to jazz them up.

the exact same recipe I've been using (from my mom), can't beat it for salmon but haven't used on anything else.
I skin and filet my salmon first too.

Myself being a relative new comer to BC, whereabouts can a person catch perch just for frying up a meal?

Thanks for the posts on this and the PMs.

knighthunter....there are a number of lakes in B.C. that hold perch. I have fished Osoyoos Lake for most of my life and it produces about as well any lake I know of.

Duck Lake, just north of the Kelowna airport on Hwy97 has lots of Perch

I like to can a lot of my smoked fish. Just throw it in the can with a tablespoon or two of olive oil. Keeps it really fresh and moist for a long time.
