Ok, I know there is probably other threads for this, but I didn't see any. I am looking for some halibut recipes, I had a bunch given to me. Tried battered halibut, but it needs some practice. What is everyone doing with other recipes like baking it?

sear both sides in butter in a hot fry pan(not so hot that the butter burns, it's a fine line), add a little salt and pepper to taste, cover with lid and put in a preheated 375 oven until it just flakes, this will depend on the thickness of your fillets.

To me, halibut can only be spoiled by too much spice. Just salt and pepper and lemon juice makes it ideal.

Don't over cook it.

Hint of seasoning salt, a liberal sprinkling of pepper, butter and oil really hot and sear on either side quickly, do not over cook, worst thing for Whitefish or it gets tough and dry quick !

1/3 miracle whip. 1/3 mozzerella cheese 1/3 cream cheese. spread over halibut and bake till you see some brown on top.

Cajun spices in a super heated pan. Sear the crap out if it for a few minutes each side - blackened a bit around the edges. Take it off just before its cooked through and serve. It'll finish cooking as you load the plate up. Yummm!

Let sit in a white wine, soy and brown sugar for 20 min turning over so both sides can soak it in, sear in hot frypan with oil for approx 1-2 min per side sprinkling sesame seeds before searing. Make sure you don't over cook.

I'v got a blackin recipe that might change your mind, no spice just fresh herbs. It comes out sooooo moist and you are right a little lemon juice and don't over cook it. You have to remember once you take it off the heat it's still cooking.

Shake n bake whatever flavour you like, bake or Fry in pan with 1-2" oil, hot and quick. Beer batter then roll in panko, cook same as above. I like to coat it, keeps er moist. Bbq skin side down just seasoning salt/pepper and vegetable spice, cover top with spreadable cream cheese.

I sprinkle a little bit of old bay. Par cook 1 lb bacon on cookie sheet. Wrap filet with bacon and finish cooking until bacon is crisp. Any leftovers get chopped and made into saamiches. And speaking of that im out of halibut

When i can salmon i usually put 1/2 and 1/2 salmon/halibut in each jar, ends up pretty nice. I also smoke it. If you only have a piece or two the the pan fried is best but if you have a large amount the jarring and or smoking is a good way to preserve it

I like poaching halibut in a deep frying pan with a lid using a lemon dill sauce reduced by a white wine served with or on top of rice.

Butterfly some of your thicker pieces into portion size chunks, mix cream cheese, real parmesan, shelled dungeoness if you have it, and salt and pepper to taste. Steam some spinach and stuff spinach and crab mixture inside of butterflied halibut. I like to bake in an aluminum pan with a can off cream of mushroom spread over the bottom and butter a bit of mayo on top of fish and sprinkle panko on top. Bake at 380 until done, don't overcook.

I like to do halibut this way. Lemon zest sprinkled in top, some shredded ginger and garlic on top of that and sliced oranges on top of that. Put gobs of butter on top of that, wrap in tinfoil ( I usually have lots of tin foil for making my hats) parchment paper will do as well. Bake and mange. Good with any type o fish.

Here's mine,
rice paper rounds dipped in water to soften
put halibut piece about three by three in centre
sprinkle a little salt a little pepper and a bit of fresh tarragon
wrap and repeat until you have enough for dinner
pan fry and serve with dipping sauce
1/4 c soy sauce
3 tbsp rice wine vinegar
2 lg shallots finely minced
2 tbsp chives finely minced
1 garlic clove
1 tsp sugar
1 tsp tabasco
make the dipping sauce up a couple of hours ahead to let the flavours marry and serve with stir fried veg and rice
This is my wife favourite meal and is amazing, I will be making it for her Bday next weekend. :smile:

Marinate in greek salad dressing then cook in pan
serve over rice. With fresh veggies mmmm so good
