Making pepperoni!!!!

Anyone have any luck at making pepperoni?? I have made a shit ton of sausages both smoked & cook to eat but for some reason pepperoni
is my downfall, either over cooked or just not right!

Any hints?

You can try the pepperoni seasoning from Stuffers. I have never messed that one up. Making from scratch prior to having a proper stuffer and using a grinder caused me some issues. One thing I have learned keep the meat as cold as possible and slowly bring up the heat in the smoker once they are dry. Don't overheat or the fat will run.
