Wanted - Goose Sausage Recipe

I have some goose breasts I'd like to make into sausage (I'm also open to other favourite recipes for goose if you want to share). I was wondering if any of you foul I mean fowl hinters have a favourite sausage recipe you would be willing to share.


Saskatchewan recipes gladly accepted as well.

John B has a pretty good recipe for sausage, you have to try butterflying a breast pounding it out and coating it with Cajun fish coating mixed with panko crumbs. Fry it in a pan with deep hot oil, best schnitzel ever
