I am looking to take a course on meat cutting/game cutting so I can make the most of my game. I am in Mission. Are there any courses offered that are not part of getting into the trade? Also want to do my own sausage because, why pay to have it done when I can tailor it to my own tastes perfectly at a much lower cost?

Funny I was looking at the same thing this morning, there's a couple of places in Van that does them, one is eatwild.ca another is Save On meats I believe on Hastings. Both of these also teach charcuterie.

Cool I'll have to look into those.

Are there not any out towards the valley?

Check out the urbanhuntress.com, there's a list of several places that teach everything you might want including making bacon and canning

I did one this year through Eat Wild and was held at Harkness Butchers in van. It was great and lots of fun. Got to take home a fair bit of pork (we practiced on a pig) too. I'd definitely recommend it...

There is one advertised in the regulations. I haven't been to it though.

Hmm im too far out of town,...took butchering vourse then learned sausage making off a master sausage maker..usually walk 1 or 2 through the process each year. .
Its not inexpensive..the Tim Hortons must be hot.
