I believe he is just a little shy on fat, other than that he looks good. As for age, I'll go with 2 1/2yrs.

Its about 20deg right now, but it was cool this morning. Had it home before 8:00am, so not bad. I have a walk in cooler, but did not bother fireing it up, will cut this moose on Monday, it will be fine until then in the shop. No real need to hang these early, young ones....IMHO :-)

I think this is the best pic I've seen on HBC. I'm no photographer but the lighting, meat hanging, elk rack on the wall, just makes you feel like you're there. Looks professional to me.

Great post, congrats on the fine moose.

That looks awesome! Mind sharing your recipe?

its very easy, just takes a bit of time.
Cut salmon into 1" strips
Place Salmon into a glass or ceramic container, separated with a mixture of Brown sugar and coarse salt . 4-1 mix.
Do not let the salmon pieces touch the container or each other.
Place container into fridge for about 10-12 hours. ( you will want to adjust this time depending on type/thickness of fish). Do not add water, the mixture will make its own water.
Remove fish, rinse with cold water, and lightly pat dry.
Lay out fish on oiled smoker racks.
Place in cool room with fan blowing across for about 12 hrs.
Place in pre heated smoker set to 120F
smoke for 4-6 hrs with your choice of chips ( I like Alder, my kids like Cherry) Baste every 2-3 hrs with Maple Syrup.
Hold the temp at 120F for another 4-6 hrs or until desired dryness is achieved, keep basting every 2-3 hrs with Syrup. (We like it fairly dry, so usually leave salmon in the smoker for 10-12 hrs. Less for thinner fish like Pinks and Sockeye, more for thicker fish like Coho/King/Chum.
Place in bags, chill in fridge over nigh, enjoy:-)

Youre probably right, it does have a smallish body for a 2.5 yr old, but a wicked big rack for a 1.5yr old.

Headed back out again now with the family for a river side lunch. Maybe see a mid day Elk, if we're lucky.

Its a great moose for eatin and that's really what its all about isn't it?? Congrats RD, and loved the pictures of the Candy!!!!!

Depending on feed quality and life pressures immy's can have anywhere from a spike to palmated antlers.

A Prince George C.O. in the early 90's shot an immy in a prime feeding area we both hunted that had palms and 7 x 5 points with not much spread. Today its way past prime area and there are the typical 2 point immys crawling around in it.

Been out trying to get Abbey (middle daughter) her first moose, but so far one cow is all that's been seen. Shoulda called you a couple weeks ago, she and I passed through FN after her first Stones hunt....couple small rams, and LOTSA rain. She did so well, even with the nasty weather!!

Great to see your post's again Kyle! The only problem I can see with the Young Bull and the incredible Candied Salmon would be I'd eat so dam much of your candied salmon while waiting for the moose steaks to cook, I'd be way to full to enjoy the Moose Steaks! And yes, your picture of the shop with the hanging meat looks awesome! I go on YouTube very little, and sure miss clicking on HBC and looking for your Threads of you, your Wife and Kid's adventures with the Argo's! If you don't mind me asking, what would a guy punch in for a "Search" on You Tube to watch your Vid's? Sure be nice to sit back for a hour or so and watch you guys waist deep in the mud again! I'm pretty well done with reading my posts on here! Glad your back!
