So i needed to make some room in my freezer and decided to chisel away at some of the goose meat from this season. After looking at a bunch of online recipes, i found this one

I made a batch of 21lbs goose and pork loin together and just multiplied the recipe, only thing i cut back to half was the black pepper. I also used packaged nutmeg not fresh ground.
Before stuffing casing we fried some little patties, very edible! They disappeared!

We have found that broiling in a little water flattens the flavour. Stick to straight frying w/ a little butter or oil, or try the oven
