I wish our season lasted somewhat longer up here. It's the weather, not the regs

Last waterfowl left the area back in early November... but the first geese will be back again in a few weeks!

Thanks For the link Ian, we where wondering what we where going to do with all the meat, Peperoni is great for summer with a cold beer, but I like the idea of corning as well as smoking a few.

If you take corned add a spice smear and smoke it you get pastrami. I love goose Reuben's and goose hash with eggs on top!
