Decided to have a go at making a batch of duck jerkey! Turned out awesome. Recipe is as follows!
Prep Time: 24 hours
Cook Time: 6-8 hours


3 pounds skinless, de-fatted duck or goose breast
2 cups water
2 tablespoons kosher salt
1/4 cup Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon dried thyme
1 teaspoon cayenne
2 tablespoons cajun seasoning
3 tablespoons brown sugar

Cut the breasts in half the thickness and then cut into 1/4 inch strips, marinate for 24 hours.


Turned the oven on at 170 degrees with the door partially opened and lay duck on a grill rack over a baking sheet to catch the fat.
Left in the oven for 4 hours.
Turned out awesome!

I tried something similar but turned it in to pet treats. I may have another go though as it looks excellent

I Tried goose jerky. YUCK!!
Never again. Buddies dog liked it tho.

Looks good.

I make some goose jerky with High Mtn jerky seasoning. Ya I know, not a made at home mix. B its awesome. Most people that try it don't believe it's goose.

Tried duck jersey before with just a basic brine and it was good. Cut it pretty think though and smoked it with a little chief.

have you tried with a smoker or just the oven?

High mountain and a jerky gun... I make about 50-60 lbs every year and it go as fast as i make it !
