I've got some fresh kitty and I'm wondering if it can be cooked less then well done? I've got it marinating in my special mixture and was going to give it a try tomorrow

From what I know as a chef, and the research I have done cougar meat has the potential for trichinellosis, worms and such, so cooking to 165 degrees F

Pretend it has trichinosis.
Do that with all predators.

I think well done will make it a dog chew toy? It only needs to reach an internal temp of 165*F for a few seconds to be considered safe from Tric. The few times I've had Cougar or Bobcat it's been quite moist and very good. Too much heat for too long can't be good.

Cook it and treat it like you would with pork. When i got my first Cougar i invited all the boys over and told them im bbqing some p***y and they were all over. The guys that never had game asked for seconds

Yeah, 165 F (not Celsius)

Don't over cook it, use a thermo. Pull out and rest @ 160, wrapped in foil for 15 minutes or so (the internal temp will still rise this way and not kill your dinner).
You are about to feast on one of the finest meals out there - ENJOY IT!

i butterfly'd a 1/2 a backstrap. marinated. threw on bqq. seared, then cut perpendicular, making nice 1" cubs of crispy
porky/chicken bits to pull of and eat. it tasted okay,
