View Full Version : So...I forgot an ingredient. Does it matter?

Making deer pepperoni today and I forgot the ice water. Does this matter a great deal or does this just help with the stuffing process. I added pork fat so I assume it's not going to be dry. Any info helps as this was my first time making pepperoni.

Usually it's added to make it easier to get an even distribution of the spices.

Ok great. I mixed up really well so hopefully it will taste ok and the cure is mixed in good too

Shouldn't affect the taste if you still mixed it up well. It also helps a lot with the stuffing if the recipe calls for binding ingredients. The moisture will be primarily determined by the length of smoking or dry curing.

Ice water just makes the pork fat stiffen and glide through while excluding.
