View Full Version : Goose garlic sausage/salami?

So anyone here ever get there geese ground up and make sausages, or smoked garlic coils?
Any ideas, recipes or butcher recommendations that do it would be greatly appreciated.

I've never hunted for waterfowl, but here's a really nice pepperoni recipe I've done with deer and moose.
Recipe is for 5lbs meat (so adjust accordingly):
4 TBLS salt
1 TBLS sugar
1 TBLS black pepper
1TBLS cayenne
2 TBLS paprika
1.5 tsp crushed anise seed
2 TBLS garlic powder
2 cup red wine (or water) - just for added moisture.
Mix well, stuff into casings and either smoke (if you like) or cook low and slow - in either oven (set at 200 degrees) or BBQ (meat over side with no flame and other side with low flame) until cooked (160 degrees internal temp is good for deer and moose, but I'm not sure about waterfowl, so please look up and adjust if necessary).

Hi, i have a lot of duck breast and goose, would love to know of a reasonable butcher shop that is willing to work my meat into sausage or burger patties. every shop i call they say they are not insured to deal with meat that isnt sourced from their suppliers.. what?!?!
help pls. thanks

thanks guys.. i live north van but drive to richmond for work so can drive a bit to get them done properly for a fair price
can i do some of them burger pattie for the kids too? or waterfowl just sausage?

The Hansel Deli in cloverdale makes terrific Garlic coil. Yes goose too. Art that used to own it still does their sausage. Used him for over twenty years.
I do believe the minimum is twenty pounds.
