I had a cousin years back who has since passed on, he was a chef by trade . he said bear fat makes the best pastry crusts and pie shells.

Absolutely the best flakey pastry! It works very well as a boot leather conditioner and will waterproof them.

Once rendered and cleaned it's exactly like lard. Never cooked with it, but have met people that have and rave about the flakiness of the pastries.

I keep a pint mason jar in the fridge for water proofing the boots. Lasts a long time.

I don't refrigerate mine, seems to be keeping well.

Yes I do. It's excellent for high heat cooking. I don't bake so I can't verify its use for that, but like steeleco said, you can use it just like lard. It's very easy to render and stores very well in the freezer until you're ready to use the next jar.

Mother said it made wonderful pastry.

Still makes better pastry and pies than anything you'll ever find in your handy dandy corner supermarket. But you have to render it at least twice, maybe three time. After the first time, it's still yellowish and smelly. Second time, it comes out white and the bear flavour is gone. Third time it's snow white and pure.

Tried using it for cooking once. Once was enough. It did treat the boots though, worked very well in that circumstance.

My first bear in 1976 provided 9 gallons of clear rendered lard. Deep fried in it, used it as diaper cream on the newborn (she's 37 now --am I that old?) baked with it and put it on my caulk boots. Great stuff.

Just simmer it over a low heat in a sauce pan. Bear fat has a very low melting point and will melt in your hand. Then you can pour the liquid into your storage jar through a filter of cheese cloth of other such filter material.
