Hey
Some huckleberries managed to make it past the kids mouths and into the bucket this past weekend. I know I can find lots of recipes by google, but does anyone have a tried and true jam recipe they wish to share?

You can make jam old school, no pectin. Simply equal parts fruit and sugar and boil stirring frequently until some drizzled on a cold plate sets to the consistency you desire. Works with all fruits. ( posted by John's wife Tanya - I forgot to log him out and me in. )

For a jam that will maintain the full flavor of your top quality fruit and not dilute it with large quantities of sugar, I recommend that you seek out Pomona's Universal Pectin, which uses calcium, lemon juice, and low amounts of pectin and sugar or other sweeteners like honey, which is what I like to use. It also permits doubling or tripling the recipe, which doesn't work reliably with other pectins like Certo.

Just made some last night! This is the recipe I have always used
5 cups of berries
2 tbsp of lemon juice
1 box of certo pectin crystals
5 cups of sugar
in large sauce pan stir together prepared fruit, lemon juice and pectin bring to a boil over high heat add all the sugar.
We all seem to like it:-D
