So I'm getting the CDS dial put on my Leupold scope and they ask for your hunting elevation. Well that varies from 500m-2100m so should I just take the average and meet in the middle or what? Also if anyone has any good or bad stories about this system please share. Thanks

I could be completely wrong here, but that variation doesn't seem like much. 1500m in elevation about sea level isn't very high up, I doubt that range has much variation between the low and high points. I would just as you say pick in the middle or where you spend most of your time.

I wrote it wrong sorry 2100 is the top of my hunting area

pick where you are the most then...thats what I would do. If you aren't shooting crazy distances it really isn't that big of a deal

Go with the average

Here's how the two extremes in elevation would effect impact at 600 yards, will use a 300 Win Mag 180gr Accubond @ 2960 fps for example :

500m/1640' - 64.5" drop

2100m/6890' - 60.6" drop

If you build the CDS for 1300m/4265' you'd be adjusting for 62.5" bullet drop, hitting within +/- 2" of point of aim, in theory

I would just use the MOA turret that comes with it. Its really easy to use if you spend a couple hours practicing with it and then you can change it whenever you want.
