Decided to cook up a piece of elk striploin tonight on the BBQ
marinated it for about four hours, wrapped it bacon and............................................... .............ate way too much:Heh, heh, heh:

ya I did overcook a bit but it was still cut it with a fork tender

Tell me .....Was this elk young or mature?..How long did you hang it..Just curious..

because I had to go back to work within a couple days I took this one to the butcher
picked it up about a month later.
It was a mature cow.
Depending on the weather and my work schedule here I usually like to hang for a week.
