Awesome. Love to hunt a hog! I've made bacon a few times and I am still working on a recipe. What was your curing salt and what was the ration used? I've used Morton's Quick Cure which called for a Tbsp per pound

Is wild pork similar to store bought?

i used a special concoction of salt from a local butcher - think the curing agent is pink #1 - dont know the exact salt measurements

and the taste is slightly more lean and a little 'stronger' - love it though!

Is wild pork similar to store bought?

Depends on what the hog's been feeding on. If it's rooting in forest it tastes more wild compared to one destroying crops. In terms of cooking and curing, it's near identical bar the fat content and toughness of the meat (similar to Factory farmed vs free range). Domestic Pig < Feral Hog < Wild Boar in terms of wild flavour.
