Tried this last night and it was fantastic.
ingredients
4 - 6 oz salmon filets ( I used wild Chinook that I caught in the fall)
3 cups of watermelon
1/2 cup cilantro
1 lime
1/2 teaspoon Salt
olive oil
1 hot pepper of some sort
watercress
Directions
In a bowl mix the following
dice up watermelon.
chop up the cilantro.
add the zest and juice of 1 lime
add chopped up hot pepper for extra heat if wanted add seeds(this can be left out)
1/4 teaspoon of salt.
spread some olive oil and sprinkle with salt each piece of salmon then either grill salmon for 8 mins flipping over 1/2 way.
To plate:
spread out some water crest on the plate. put salmon on top
then spoon over approx 1/2 cup of the salsa.
