View Full Version : Smoked whole pork leg!

So seeing how this Christmas we did not have a traditional dinner I figured I would make a whole smoked pork leg for my brothers birthday.

So it all began yesterday when I pick up a 20 lb leg and started to prep it

I cut out the hock and took off the top fat cap. Also I cleaned up some of the fat.

So now it's ready for the good stuff! The rub and injection,

The injection is made up off winter jack and apple juice mixed with some lemon juice.

How much smoke and what temp ? That looks great . Pleeeaase show us the inside . Cheers . Geo

look good. What wood? how much smoke? cook temps?

That Winter Jack is awesome. I never thought of using it for injecting. It would be perfect for pork

So for temps I smoked it for 4 hrs at 225 f the covered it with foil and have it going at 300 f till the inside temp is between 180f and 200 f then let it rest for half an hour . Alder cherry and some hickory is my mix a log an hr is what I do.
