Well, I was 99.99% sure I *told* the butcher I wanted half Bear Sausage, half Bear Salami -- but bringing things in from a hunting trip you are kind of out of it so I am not saying anyones done wrong, nor am I upset!

Anyhow, went to pick it up and I have half cheddar/jalapeno smokies (correct!) and half bear salami. Bit of a curveball, all the recipe work I've been doing was more for sausage meat - wanted to do burritos, spaghetti etc..


Anyone have hints as to what can be *cooked* from bear salami ? I dont' care if there is extra work. I just want to have some fun with it, and not just eat 1000 salami sandwiches haha..

lots of sausage fprom a bear eh.? you"ll be eating it for a long while. I found that it goes pretty quick jusut cutting big chunks of salami and cooking them on a stick over the fire when youve got 10 other hungry beer drinkers around. you'll be the hit of the party

salami sticks cooked over a campfire while ice fishing always good, sliced thin pan fried with eggs for breaky.

I put my bear salami on pizza. Get a meat slicer and away you go!

This past spring I did chorizo, farmer sausage, salami & peperoni from Kurt at Sumas Meats... All of it is fantastic as usual.. the farmer sausage is a huge hit with everyone. The salami I have been running through the meat slicer and using it on pizza and it also makes fantastic lunch meat for sandwiches.

I thought half Summer Sausage and half Salami -- but it came as Half Cheddar/Jalapeno Smokie and half Salami. I was hoping to have some uncooked in casings to make with.. But i think i will just cube up the smokies and make a chilli, but only put the meat in for the last hour.

Smokies vs Sausage is just cured vs uncured, no ?

A smokie is a type of sausage, just like salami, pepperoni, bratwurst, chorizo, summer sausage, bangers etc. Pretty much any meat in a natural or synthetic casing is a sausage, whether or not it's cured. Both smokies and summer sausage are typically cured.

I have made smokies both cured and uncured, but I pretty much make all my sausage cured these days other than english bangers and breakfast sausage, just in case you are too inebriated to make sure you cook it through.

I have a 300 page Sausage Bible that has been passed down and it's ridiculous the amount of information and different types of sausage there are.

OK, well, I just had 2 of the smokeys they finally arrived. Nevermind the worry, this sh*t is amazing!! Packed up about 120 huge smokies and 6 * 8lb salamis and that's only 2/3 of the meat, my hunting buddy got the rest. All I can say is YUM

I think the next bear I get will go half peperoni half smokies. I've never had bear smokies but I have heard they are great

Ya the cheddar jalapeno smokies are delicious man, now that I have gotten working with this stuff its amazing..
