Found a recipe here for some good eats , so better contribute
Good quick snacks for the hunt
ENERGY MUFFINS
2 c. finely grated carrots
1 c. chopped walnuts
3/4 c. chopped dates
3/4 c. chopped raisins softened in water and drained
Combine and set aside
3 c. flour
1/4 c. soya flour
1/2 c. wheat germ
1 c. rolled oats
1 c. coconut (not in mine, thanks)
1 tsp. salt
3 tsp. baking powder
2 tsp. mace
2 tsp. cinnamon
1 tsp. nutmeg
Mix together in a large bowl
3 eggs , beaten
1/2 c canola oil
1/2 c. honey
1/4 c. molasses
2 c. milk or buttermilk
Combine these
Make a well in the center of the flour mix and add the liquid mix gradually. adjust moisture with water if needed.
add the veg mix and stir in
Bake in greased muffin tins at 350 for about 25 minutes
