Hey guys, just wondering if anyone could share any grouse rrecipes for a beginner hunter! Prefferably nice and simple and easy to do as im not much of a cook haha....thanks!

Slice the breast meat off the bones, put in a square or rectangular cake pan, sprinkle with whatever spices you prefer, pour cream of mushroom soup (undiluted from a can) over the meat (enough to cover it), put in oven and bake at 350F. I'm not sure how long though. Serve with mashed potatoes and kernel corn.

Buy a box of shaken bake,,$4,,,,,bone on or bone off,,doesn't matter,,,cook in oven at 350 for 35-45 min,,,,you will be hooked for life

If you have a slow cooker, take the meat off the bone, throw in the meat, whatever veggies and spices you like, add a can of cream of mushroom soup, and enough water to cover it all. Let cook all day, then enjoy.

Or, slice the meat into thin strips, take a plastic bag, dump in about a cup of flour, some garlic powder, onion powder, cayenne pepper, salt, poultry seasoning, shake it up til well mixed, dip the meat strips in mayo, then put in bag of flour one by one, shake til well coated, then deep fry.

Salt, pepper and into a frying pan. Slice and put between 2 slices of bread. MMMMMMM

slice breasts and fillets off, soak in hot/bbq sauce overnight, then bbq the next day... my fav

Cut the meat into pieces, wrap in thin sliced bacon, hold together a with toothpick, bake or fry till bacon is crisp.
Hell of a good appetizer!

Cut the breast into 1 inch thick slices roll them in your secret poultry spice.
Then wrap them with bacon and pin them with tooth picks.
Then in the oven for 30 minutes at 400 F.
Chew very softly if you've used a shotgun :mrgreen:

Bone it out, put it in a bag of flour and other spices (I like garlic, italian and spicey habanaro, salt and pepper), shake the excess flour off and pan fry it in butter until golden brown, cover with a can of mushroom soup and half a can of water, add some onions, mushrooms and fresh garlic and simmer until the sauce is reduced and thick. Serve on a bed of quinoa or wild rice with fresh veggies.

bone out breasts, dip in egg, roll in mixture of fine bread crumbs, Parmesan cheese, poultry seasoning, seasoned salt, pepper, and quickfry till golden brown. Don't over cook. Delicious.
I either use the legs for spaghetti sauce or dip in egg, roll in mixture of your favourite crushed chips, tortillas, what-have-you, with a bit of flour, and fry up as appies. A little tough but mmmmmmm.
I will definitely have to try some of the above recipes.

another is do the breast in the cream-of-mushroom soup thing but add a can of cream-of-celery soup and a little sour cream and no water. Serve over your choice of rice.
These are very simple and easy to do in camp or at home. this will work for chicken, wild turkey, any white breast meat.

Leave breast on bones peel and apple stuff inside the breast cavity, season wrap in bacon and cook on BBQ or smoker. baste with bbq sauce while cooking

Grouse & Crab:

1 cup cooked grouse cubed 1/4 cup chopped onion
8oz fresh or frozen crabmeat 2 cups rice or noodles
1 can cream of chicken soup 1 tbsp lemon juice
1 can button mushrooms 1/2 cup buttered bread crumbs or crackers
1 can cream of mushroom soup
1/2 cup milk

1- Cook rice or noodles as directed on package, stir milk into soups until smooth, stir soups into cooked rice / noodles
2- Drain mushrooms, add lemon juice to crab
3- Place half the rice / noodles in a buttered casserole, layer half the grouse, crabmeat, mushrooms over rice / noodles
4 - Layer with rice / noodles, place the remaining grouse, crabmeat, mushrooms and onions on top.
5 - Top with buttered bread crumbs / crackers, bake @350 for 30 to 45 mins, serves 6.

Cut into squares then dredge in flour, then egg wash then seasoned flour deep fry dip in your favorite sauce grouse McNuggets MMM or do the squares in a slow cooker in sweet and sour sauce with mushrooms, onions, peppers and pineapple serve over rice very good.

Pretty easy to see the entry wounds and just as easy to make sure no pellets remain in the meat:mrgreen:

This is the simplest receipt and it doesn't smother the delicate flavor of any upland fowl. Start with the basic clean compleat breast section leaving it whole on the bone, I prefer Blue grouse. Ensure you remove any and all shot. Slice down the center sternum on both sides, but not all the way thru just so it opens up when you place it on it's back. Coat liberally with olive oil, sprinkle with salt and pepper and perhaps a bit of poultry seasoning ( but not too much) and bake in a preheated oven at 350 degrees for 12 - 14 minutes. Timing in your oven maybe slightly different but don't over cook, just until all the pink is gone and it's still juicy. To finish on the plate sprinkle with just a wee smidgin of finely chopped parsley. Serve one per person, with a nice light white wine and everyone will think you're a world class chef.
