does anyone shoot without a peep? I am thinking it may give you more peripheral sight? If my anchor points are solid then would it make much difference?

I wouldnt see the need for more peripheral vision. Once my bow comes up all I'm concentrating on is the sweet spot.

There are people who do not use a pep sight however

Have you considered changing the size of your peep? I put a bigger one in and it made a world of difference
A peep will make you more accurate, without a doubt.
For hunting. the minimum size should be 3/16" and 1/4" is even better if the sight alignment allows.
I harvest carrots. I kill animals.
Look into the no-peep. Have shot with one on my old bow. New bow came with peep so just left it on. One day i will put the no-peep back on. The no-peep solves any bow torque you might have. If the green dot is centered to the black every time your form is good. Any info needed just ask.
