    soy sauce, hot sauce, BBQ sauce, dijon mustard, mix it up, marinade anything with it. freaking awesome.

    Garlic, ginger, soy, brown sugar and oil is another quick and easy. Like to add some chili flakes or a form of spice to it as well.

    Mayo,brown suger,bit of soy,bit of dill, don't over cook and put on the fish after the flip and right at the last 2 mins of cooking. killer.

    I got one like Goat Guys recipe that I love for beef or fish steaks
    Marinade in (per steak up the recipe for every additional steak)

    1 table spoon of brown sugar
    1/2 table spoon of vegetable oil
    1 table spoon soy sauce
    1/4 spoon black pepper

    mix it up and paste on steaks
    let em soak for minimum an hour usually 2-3
    then cook on the bbq or in oven.

    If you like to preserve the fish flavour cook like a fillet with just
    Butter (not margarine),
    Dill

    My wife likes to add a bit of either pepper, or seasoning salt, or garlic powder from time to time.

    here is an asian inspire that was an instant hit @ my wedding reception: I cooked for it myself. BLEW PEOPLE'S MINDS!

    mix a 1/4 cup Hoy Sin Sauce, 1/4 cup Sweet Thai Chili sauce, 3 minced garlic cloves & 2 tbsp. Soy sauce. Put your steaks into ur baking pan (i used a square cake pan, foil wrapped) brush this onto all sides of the steaks, rough chop half an onion drop that in & around the steaks, evenly drizzle ther remainder of the sauce, cover, & let sit in the fridge for most of the day (for us it was during the wedding ceremony) then bake @400 until done. When I served the steaks I cut them in half to quickly debone & served the mock fillets.... I couldn't believe how fast they disappeared from the serving platter. 2 brothers who simply won't eat salmon insist this is now the only way they will go.

    another family fave: super simple bake, a sliced lemon, ground black pepper & salt to taste. Little garlic. Bake on a flat sheet with a little olive oil. I like how the lemon slices kind of candy themselves to the top face of the steak.

    best theory I heard from my grandmother: you can cook a salmon in almost as many ways as you can cook a chicken. So far, Granny be right.

    Seasoned as you prefer (fresh ground pepper for us) a bit of lemon juice, slice of butter and cook them in the oven under the broiler.

    or

    Put your salmon steak on tinfoil, cover with a spoonful of basil butter, slice of tomato, slice of lemon, one bay leaf, season with salt, pepper and paprika. Seal tinfoil and cook on medium BBQ.

    basil butter: blend fresh basil (15 leaves approx) 3 garlic cloves, 1/4 lb butter, few drops of lemon juice and salt and pepper

    I grew up on the East Coast and on Atlantic salmon.
    My grandmother in New Brunswick used to cook salmon this way:
    Take your salmon steaks and fry in a very hot pan until brown and crunchy on both sides. You can turn down the heat once you have the steaks seared.
    Meanwhile make a simple white sauce and hard boil some eggs.
    Put the eggs through a ricer and add to the white sauce along with salt and pepper to taste. You may add some fresh or dried dill also if you like.
    Serve the steaks with the white/egg sauce on top. At grandma;s place this was always served with boiled potoatoes and fiddle heads which she would can when in season.

    Mix together,

    2-3 tbsp maple syrup
    2 tbsp olive oil
    2-3 drops of tabasco sauce (or more if you like it spicy)

    Place salmon skin side down on a baking tray covered in foil.
    Brush on mixture
    Broil
    Baste again 1/2 way through the cooking.
    Cook until the salmon just flakes apart.
