I see only a few guys even include deer on their list here.
My picks would be,
Bison, Moose, Elk, Sheep and Ruffed Grouse, in no specific order.

Rough Grouse, Bison, Sheep, Elk, Moose. The order changes depending on the quality of the animal.
PS Hunger is the best chef. A hungry sheep hunter will eat wierd things.
