Sauerkraut in a Jar

- Cabbage
- 1 tsp. salt per quart of cabbage
- Shredded cabbage - very fine
- mix with salt.
- Mix and knead with hands to form brine.
- Put into jars, shaking down, but not packing tight.
- fill jars with boiling water, remove air bubbles, and seal.
- Process in boiling water bath for 30 minutes.
- Keep in warm place, will be ready in two weeks.

This sounds awesome! Especially since you can take it to the bush and not worry about spoilage. (If it lasts awhile--Ha!)
My old trusty version ;
Take two slabs of pork side ribs (usually two packs from a grocery store or one full size slab cut in two lengthwise from the butcher) cut them into chunks about 3 to 4 inches long. Spice with Hys , granulated garlic and pepper, brown in hot pan and remove.
Take your big ol'slow cooker and in the bottom add a layer of your fav. I use the wine stuff Bicks , then layer some of your ribs on top with some fresh smashed garlic cloves sprinkle with paprika, Repeat this process with a small layer of kraut on top, add a cup of any white wine .
cook on low to medium for 10 hrs .
Take some good russet potatoes boil until tender and mash them up with butter and condensed milk , salt and pepper .
Have with an ice cold beer of your choice .

Took some sauerkraut to Edmonton to an old hunting friend (see post "A young man's bear). He said it was so good it brought tears to his eyes. Said he hadn't tasted home made stuff since Baba passed away (his mother-in-law---my brother-in-law's mom--a real Ukrainian old world cook. Cabbage rolls and sauerkraut).
Took some out myself and cooked it with Mundare (Stawnichy's) garlic sausage.Had to kick my son out of the kitchen--he always high grades the sausage when I turn my back. LOL
