Home made Kraut freezes well. I do 50lb of cabbage a year and give away a fair bit (have my own group of beggars/theives).

Between Maddi and I and any company that may be kickin around, its usually gone in about a yr.

Funny you should mention it! I asked our Ukrainian relative (Bobba) if she had a secret way to preserve sauerkraut once it reached its peak flavor. Just freeze it! she said--Here I was thinking there would be some old world secret. Never laughed so hard.

And do I dare mention the absolute best? Mundare garlic sausage (ham sausage slow steamed in sauerkraut).

I love the fact that the street vendors have sauerkraut for the hot dogs and smokies. Makes something that is mighty fine taste waay better!

For sure ! I ONLY buy Stawnichy's Mundare garlic sausage. I get it at an outlet store on 118 ave and 51st Street--just down from Wayne Gretzky Drive. (Ed's Restaurant).
